Show B9 Castle Valley Review, April 2009 An Example of Cooking Done Right Kathy Ockey If you want a job done right there is one person you should ask – Gloria Patterson. Gloria and I worked together for a common cause for almost nine years and Gloria has a talent that whatever she is working on is done very precisely and correctly. Gloria grew up in the same town that I did but she knows a lot more about the people who resided there in the past and their histories than I will ever know. Gloria was born to Melrose and Essie Tuttle in Helper. Her father was then working at the mine in Kenilworth. They moved to Melrose’s hometown of Orangeville shortly after Gloria was born and she was raised and educated in Emery County. She still has many relatives that live in Orangeville. Gloria attended grade school and then seventh and eighth grades at Central High School in Castle Dale. She completed ninth through 12th grades at South Emery High School because Central High School was closed due to World War II and a teacher shortage. After her graduation she started working at Carbon Emery Bank and worked there for 16 years, “Back when it was on West Main Street.” She also completed a mission to Hawaii, “When only rich people went to Hawaii. It was a good experience but television was new and popular there and people didn’t want to answer their doors and let us in.” Gloria and her husband, Norm Patterson, went back to Hawaii on their 25th anniversary and really enjoyed their trip. Norm and Gloria live in Price and are the parents of three children and 13 grandchildren. Their son Lynn lives in Washington, Suzy is in Park City, and Julie lives in Price and stops in regularly for lunch. They were ordinance workers at the Manti Temple for 12 years. When asked what they do for fun she said, “That isn’t part of our lives, but we enjoy being coordinators for church at Park Dale Nursing home twice a week.” Gloria repeated what is commonly said by many other good cooks, “I don’t cook as much as I used to and I use a lot of my basic recipes when I prepare a meal, but they are the dishes we like.” Gloria also created an amazing cookbook for her granddaughter that is filled with many of her excellent recipes-it looks like it was professionally organized and printed. She said other members of her family often call for recipes they remember having and then pass onto their own families. Gloria is sharing the following delicious combination of recipes that, when combined, would make a complete, delicious meal- main dish, salad and dessert. Mexican Casserole “Easy and delicious” 1 pound ground beef Salt and pepper 1 onion Grated cheese 1 package (12) corn tortillas Mix together: 1 - 8 ounce can tomato sauce 1 – 10 ounce can enchilada sauce 1 – 4 1/4 ounce can chopped olives Brown meat and onion, add salt and pepper, drain off fat. Add olives and part of the tomato sauce mixture to the meat and onion. Start with tortilla, then add layer of meat mixture, grated cheese, continue the layers until all meat mixture is gone. Add extra cheese on the top layer. With the rest of the tortillas, tear in half and line sides of the casserole. Pour the rest of the tomato mixture over all and around the sides. Bake at 350 degrees for 30 minutes. Optional: Garnish or put on top any or all of the following ingredients: Sour cream, layer of shredded lettuce, green onions, sliced olives, tomatoes or salsa. Watergate Salad 1 cups (approximately) small marshmallows 1/2 cup chopped nuts 1 can crushed pineapple, undrained (15 1/2 ounce small can) 1 package instant Pistachio pudding (sugar free) 1 carton Cool Whip Pour pineapple and juice into bowl. Add the Pistachio pudding mix with a wire whisk. Beat until well blended. Fold in Cool Whip and nuts. Leave in bowl or put into parfait glasses or dessert dishes. Store in refrigerator. Makes 4 cups or 8 servings. Apple Pudding Cake 4 – 5 cups grated, peeled apples (About 6 large apples) 2 cups sugar 2 eggs 1 cup oil 2 cups flour 1 teaspoon salt 2 teaspoons soda 2 teaspoons cinnamon 2 1/2 teaspoons nutmeg 1 cup chopped nuts 1/2 cup raisins Sprinkle sugar over grated apples. Add chopped nuts and raisins. Bake 40 minutes at 350 degrees in a greased 9inch by 13 inch pan. Spoon into dishes and serve with sauce. Sauce 2 cups brown sugar 3 tablespoons flour 1 cup canned milk or thick cream 2 cups water 2 Tablespoons butter Mix together brown sugar and flour, add water and butter. Boil for 10 – 15 minutes. Cool, and then add 1 cup thick cream or canned milk. Reheat to serve. Another Good Sauce 1/2 cup butter 1/2 teaspoon rum extract 1 cup brown sugar 1/2 cup whipped cream or half & half . |
