Here are found ideal conditions, including crystal water, temperate climate, sweet grasses mixed with clover, selected dairy cattle, scientific agriculture and the skill of generations of cheese maers. These cheese makers are processing the same quality of cheese for which Switzerland is famous the world over. I is appetizing, natural Swiss cheese I f A TYPICAL PASTORAL SCENE IN CACHE VALLEY I SANITATION AND CARE ARE ESSENTIAL TO QUALITY DAIRY PRODUCTS I i 1 i t i shining copper kettlei, each holding approximately 26,000 pounds of choice millc, shown above, demonstrates the modern equipment of this cheese plant. Controlled temperatures and stirring produces the uniformity of the curd in the cheese mass. Following the stirring, when the curd grains have settled, the cheese is recovered by means of a dipping cloth and a hoist. It is handled with care for an even distribution of the "eyes" of the cheese during the later ripening process. TH The curing rooms of this cheese factory aie world famous for the size ano scientifically controlled temperature and humidity. Here the "eye forming" bacteria do most of the work. These wheels of cheese are turned periodically and salted at the same time.
