(AP) On a busy day at Ben Zooks farm, in Mifflin County, his cider press extracts 3,000 gallons of the amber liquid from bushels and bushels of apples. Zook, an old order (also known as Amish), operates his press hydraulically with a series of belts and pulleys powered by a tractor. Men-noni- te The large press exerts xk tons of pressure onto the shredded apples, releasing the juice, pectins and whatever pulp is not filtered out of the nylon cloths that enfold the apples. But there are human hands that see to the order of things. The human hands are those of Ben Zook; his recently married daughter, Lois a Peachey, helper in the cider press since, as she indicates with her hand, she was about 3 feet tall; and Zook's son, Wilmer. While Mrs. Zook waits for a large copper kettle of bubbling cider to cook down enough to add the snitz d (cored, peeled and apples) she sells basketed apples to an occasional thin-slice- customer. Apples that ripen in fall are best for cider because theyve received more of the suns sweetening rays and their wide variety when pressed together produces a beverage of superb flavor. The apples are fed into a trough and then tracked up a conveyor to the top of the building, where they are hammered through a metal h holes. screen with half-inc- Peggy Branch Bart Hyita Mr. Mrs. and Branch of Robert Wellington Jean Psarros Kyle Killpack R. are pleased to announce the forthcoming marriage of their daughter, Peggy Jean, to Bart Jay Hyita, son of Mr. Robert Hyita of East Carbon and Mrs. Patricia Johnson of Paonia, Colo.
