Add 3a cup sliced olives and toss gently. Add additional salt, if necessary. Keep warm in skillet. Meanwhile, broil lamb chops 3 to 4 inches from source of heat 6 minutes per side, or until desired degree of doneness. Arrange chops on olive rice mixture in skillet. Serve topped with dollop of hollandaise sauce, garnish with remaining sliced olives.
