Right before us is the big gest 'eating' month of the year, and we'll all be right in there doing our bit. I I So here are two good recipes. The first is a casserole from my sister Amber in California. She really gets around the cook pots and so when she says its good, I listen. (Jam and. A ppk Cawwofa tbsp. fresh lemon juice cups hot apple juice Vi tsp. cinnamon Vt cup raisins Vt tsp. allspice 1 large yams cooking apples 3tbsp. butter tbsp. cornstarch Vt cup brown sugar (firm) 4 2 5 1 Parboil yams for 40 minutes, peel and slice inch thick. Peel, core and thinly slice apples. In a small pan melt butter, add cornstarch and sugar. Mix in lemon juice, hot minutes. apple uice, allspice and cinnamon and cook for one-thir- d 5-- 6 S: In a shallow greased casserole, alternate layers of sliced yams and apples. Sprinkle raisins on top and pour the hot apple juice mix over it all. Cover with foil and bake for one hour at 375 degrees. Remove foil and continue baking for 30 more minutes. It will turn a brownish color, but, no fret, it's supposed to. S Okay, once the soft ball stage is reached (it will form a soft ball when half a teasponful is dropped into a cup of cold water) remove from the heat and add 2 cups of pecan halves, a teaspoon of vanilla and tablespoon of butter. Mix it until it becomes glossy and starts to get very thick. Quickly now (move fast) spoon it onto greased waxed paper (of course you fixed the waxed paper ahead of time) making little patties. If you want to, and hove some helping hands, before the candy hardens, you can turn the pecan halves right side up, but that's for cosmetic value only. Tastes the same up or down. Let the patties cool completely before removing from the paper. Now, the mixture might become hard before you have time to get it all onto the paper, and if so, return it to the heat for a few seconds, or until the right consistency is reached. iji: : These candies are beyond description. They'll not only melt in your mouth but also the heart of the meanest Scrooge you might know! Save the patties for Christmas and portion them out carefully. They aren't . . . don't say I didn't warn you . . . skimpy on calories. But so what, Christmas comes but once a year . . . and aren't we glad? Using their mother, Liz (Mrs. Greg) Naccarato as a role model, Amy and Callee Naccarato have begun to use creativity as a way of expression. Like their mother these young women are also learning the delights of using their talents to give gifts that are handmade, and thus a real part of the giver. Mrs. Naccarato has always been interested in working with her hands. Before she had a family she made many of her clothing items. She loves knitting, and is a member of a craft club that meets monthly to explore new ideas or methods. Her current endeavor is counted cross stitching. According to Mrs. Naccarato counted cross stitching differs from cross stitching in that a loosely woven material is used, and the pattern is not printed on the material. A pattern can be purchased or designed by the craftsperson. The pattern is made by counting the number of stitches, and then following the weave of the material. Some counted cross stitchers are using thermal underwear to create designs because the material has an open weave and a definite pattern to follow. The types of material that Liz prefers are aida cloth and hardanger. teacher who Liz, a has a nursery school in her home, is well aware of the importance of developmental skills for children of all ages. She feels tha for children over 8 years of age counted cross stitching can be a beneficial method of teaching and developing basic skills. Liz purchased kits that are very easy for children and introduced counted cross stithing to her oldest daughter, Amy, and a group of 10 and 11 year old girls. Younger daughter Callee could hardly wait until she turned 8 and could follow in her sisters footsteps. She has since learned the techniques involved, and is working on butterflys that will be framed and used as gifts. Tony Naccarato who is 5 is still content to just watch the females in his family practice their skill and admire their finished products. Eleven year old Amy, following in her mothers unselfish way, has already delighted her grandmothers with counted cross stitched pictures she made for them. She did keep one to hang in her room. She is currently working on baby gifts for a soon to be born cousin. Following in the vein of most creative people, Amy is seeking other outlets for her talents. The recipe is written in a way that is easy for a young chef to follow. Pyrenees Potato Pie Have ready for potato shell to 4 baking potatoes, pared 4 cup butter or margarine 2 tsp. salt Solid vegetable shortening 3 work which they use for gift giving and decoration in their own Holladay counted-cross-stitc- potatoes. Dip a paper towel into the solid shortening and spread a thin layer over the bottom and sides of a 10 inch pie pan. Line the bottom and sides with potato slices to look like a crust. Save 6 potato slices for the top. Filling 2 h home. cook for 10 minutes. Remove the potatoes from the skillet, place in a bowl and set aside. Repeat the same steps with the remaining 1 Youll need potato peeler, cutting board, sharp knife, measuring cups, large skillet, measuring spoons, pancake turner, medium bowl, paper towel and 10 inch pie pan. Using a sharp knife slice pared potatoes crosswise as thin as possible. You should have about 4 cups. In a large skillet over medium high heat, melt butter or margarine. Add 2 cups potatoes and 4 teaspoon salt. i . Turn the potatoes with a pancake turner to coat with butter or margarine. Set the timer and their onion finely chopped cloves garlic, peeled and fine- ly chopped llk pounds lean ground beef 1 can tomato sauce 1 cup grated Monterey Jack cheese Vt cup pitted black olives, halv- Add the remainder of the ingre- dients except the black olives for the garnish. Stir well. Using a slotted spoon, spoon the mixture into the potato shell. Garnish the top with the saved potato slices and top each with an olive half. Set the timer and bake in the oven for 40 minutes, or until the potatoes are soft and the edges are lightly browened. Use potholders to remove the pie pan from the oven. Allow the pie to stand at room temperature for 5 to 10 minutes before cutting. Heat the oven to 350. In the same skillet that you cooked the potatoes, cook onion and garlic until golden.
