Burningham has a special way to express her Valentines message to Lowell and the Burningham children. She does it deliciously meal topped with a yummy with a all made with TLC (tender cake loving care). I try very hard to make occasions like Valentines Day special, Myrna said. I love all holidays and birthdays and can think of no better way to make these days memorable than to prepare something in the kitchen which is especially enticing for my husband, our son, Kraig, 15, and daughter, Kelly, 6, to enjoy. The older children, Lezlee and Steve, are now out of the Burningham nest. ESPECIALLY enticing THE SOMETHING Myrna chooses to make to go along with Beef Pot Roast Jardiniere is a luscious Cherry Cake. Myrna acquired this treasured recipe from her mother soon after she and Lowell were married 19 years ago. My mother was such a terrific cook. She always observed special days with something good from the kitchen. This Cherry Cake was a favored treat for s Valentine's Day at our house. A move to Las Vegas shortly after their marriage whisked Myrna away from the source of her cooking security. Even from that distance, mother often helped me when I got in a bind I would call her on the and she would have phone and explain my problem it solved immediately. OVER THE YEARS, good cook, Myrna. has learned to do her own kitchen problem solving and does it with much ease and expertise. I really enjoy cooking for my family, she commented. Lowell is quite particular when it comes to eating. He doesnt hesitate to tell me if he's not too crazy about something I prepare. But he also is prompt to praise me if I create a specialty he really enjoys. Cherry Cake fits into this mold deliciously and never ceases to bring raves from the Burningham clan. Cherry Cake (Mrs. Lowell K Burningham1 A4 1V4 3 1 Vz cup shortening cups sugar eggs teaspoons vanilla cup plus 2 tablespoons buttermilk 2V4 cups plus 3 tablespoons flour teaspoon salt 4 teaspoons cinnamon teaspoon nutmeg teaspoon allspice 1 Vi teaspoons soda dissolved in a little warm w ater 1 can (16)4 ounces) dark sweet pitted cherries, drained and cut up cup chopped walnuts (optional 1 1 1 Frosting Cream shortening; add sugar, eggs and vanilla. Beat until fluffy and well blended. Add sifted dry ingredients alternately with buttermilk. Stir in dissolved soda. Fold in drained cherries and chopped nuts. Pour into two greased and lightly floured eight or nine-inccake pans. Bake at 350 degrees for 40 to 15 minutes or until a wooden pick inserted in center comes out clean. Cool on wire racks Spread Frosting between layers and on sides and top of cooled cake Decorate with hearts as desired. h Frosting '4 1 square butter egg yolk l'i teaspoon vanilla tablespoons evaporated milk 2' to 3 cups confectioners' sugar Combine all ingredients in mixing bowl Beat until well blended. Spread on baked and cooled cake. 4 Cherry Cake (Salt Lake Readeri 1 13 cups sugar tablespoons shortening 2 eggs 2 teaspoons soda dissolved in 4 teaspoons warm water 2 cups flour teaspoon salt 2 cups dark cherries, drained and pitted "I use my 4 1980 10, 1 ' homecanned) cup chopped nuts 13 cup cherry juice Syrup Whipped cream Cream sugar, shortening and eggs until well blended. Add dissolved soda and blend into mixture Add flour, salt, dark cherries, nuts and cherry juice 1 Blend well. Pour into greased and lightly floured 9 x U inch baking pan Bake at 325 degrees for 40 minutes or until cake tests done Lake Sait The II 2 1 For a heavenly Valentines Day dinner, serve Beef Pot Roast Jardiniere. For dessert you might make Pear Meringue Valentines. Meanwhile, prepare Syrup Syrup 2 cups brown sugar, well packed 2 cups water 4 tablespoons cornstarch Dash of salt In saucepan combine brown sugar, watoi, corn starch and salt.
