Show J Page Six The Springville Herald November 2 1. 1974 Caiii Bci-jigriMi, Pi'iinsylvanui's conlostant in the 197-1 National Chicken Cooking Contest, is creative not only in her job as a free-lance designer but also in her culinary skills. She developed Lindos Chicken when she lived in Creeee and received the $2,000 fourth prize in the contest which this year was held in Winston-Salem, Nofth Carolina. LINDOS CHICKEN 1 broiler-fryer chicken, cut in serving pieces 13 cup Mazola corn oil 1 large clove garlic, minced 1 12 teaspoons flavor enhancer, divided 1 cup dairy sour cream 1 cup (10 34 ounces) cream of chicken soup 1 tablespoon lemon juice 1 teaspoon thyme 1 12 cup sliced fresh mushrooms 12 cup sliced green onion (Use some of the green top.) 12 cup sliced pitted black olives, well drained 14 teaspoon celery salt 6 slices bacon, cut in halves Garnish, parsley Heat corn oil in fry pan over medium heat. Add garlic and brown lightly. Add chicken; sprinkle with 1 teaspoon flavor enhancer. Cook over medium heat until nicely browned, turning as needed, to brown on all sides. In a mixing bowl, stir together sour cream, chicken soup, lemon juice, thyme, mushrooms, onion, olives, celery salt and remaining flavor enhancer. Place the browned chicken in large flat casserole; cover with bacon pieces. Bake, uncovered, in 425 oven 25 minutes or until bacon is crisp. Remove excess fat. Spoon prepared sauce over chicken, covering each piece entirely. Reduce heat to 375; bake 25 minutes or until sauce bubbles, mushrooms are tender and chicken is done. Garnish with parsley. Makes 6 servings. Markets arc plentiful with this season's bountiful crop of Russet potatoes from Washington State. Excellent bakers, these high quality potatoes are the perfect choice for using in delicious Cheesey Potatoes on the Half Shell. Centers of bilked potatoes are combined with hot milk, egg, butter, and both Cheddar and Parmesan cheeses. The fluffy mixture mix-ture is piled into the seooped-out shells, then returned to the oven until puffed and golden. If desired, the stuffed potatoes may be prepared in advance and refrigerated or even frozen before reheating re-heating at serving time. Cheesy Potatoes On The Half Shell 3 large Washington Russet V potatoes 1 W cup hot milk 3 tablespoons butter 2 1 egg. slightly beaten Vi teaspoon salt Scrub potatoes and bake at 400 degrees 50 to 60 minutes. Halve potatoes; remove and mash pulp. Add remaining ingredients, mixing mix-ing well. Spoon into potato shells. Return to a 400-degree oven 15 minutes or until heated through and golden.
