Here's one that was taught to me while I was working as the Night Chef at the San Francisco Hilton. 7- In . : Chef Dan Philpot The author was an Austrian Sous Chef, and a dear friend. I prepared this dish recently for Megan McEwan of Vernal, and she said, "These potatoes are freakin' awesome!" She requested the recipe, so here it is, for Megan and you. ANNA POTATOES Ingredients: 4 medium potatoes (from Idaho, of course) 1 cup half & half or cream 12 cup grated Swiss cheese sea salt & white pepper to taste a dash of fresh grated nutmeg nut-meg Procedure: Peel raw potatoes and cut in half, then slice thin. Prepare your 9x13 baking dish with a light coating of cooking spray. Spread potato slices in dish like fanned cards only in straight lines. Sprinkle with seasonings and cheese, then cover completely com-pletely with half & half. Bake in a 350 degree oven for 45 minutes or until tender when pierced with a knife. While it snows occasionally here in town, at 8,000 feet above sea level, Afghanistan sees snow every day. Inadequately dressed for the extreme weather, weath-er, people, including children, are treated for frostbite on a regular basis. One soldier from Vernal is doing all he can for these people, with the help of his family and community back home. Recently, while on a humanitarian aid mission with the military, Wilkinson saw children receiving coats and shoes, but no gloves. Now, with assistance from his wife, Marsha, he hopes to personally deliver gloves to the children in areas surrounding his base. They have already collected col-lected about 175 pairs of gloves and plan to send the first shipment ship-ment this Friday. With Wilkinson gone for Christmas this year, the project is a way he and his family can connect. "It's difficult at home, but we feel like we're serving by being able to support him," Marsha Wilkinson said. "This way I feel apartof it." .... - i Wilkinson has served in the military for 23 years, with his first tour of duty during Desert Storm. He used to be the national nation-al guard recruiter in Vernal. Gloves may be dropped off at Jiffy's stores in Roosevelt and Vernal or at the National Guard Armory in Vernal, at 220 South 500 East.
