Lemon Meringue Pie by Glenn Andersen, 1st place adult custardcream 1 baked 9-inch pie shell 1-14 cup sugar 6 tablespoons cornstarch : 2 cups water 13 cup lemon juice 3 eggs separated 3 tablespoons butter . 1-12 teaspoon lemon extract 2 tablespoons vinegar 2 teaspoon lemon zest J: Mix sugar and cornstarch with 2 cups water Combine egg yolks with juice and beat. Add to mixture and cook until thick, stirring constantly;: Add extract, butter and vinegar; stir thoroughly. thor-oughly. Pour into shell and cool. Meringue: 1 tablespoon cornstarch 1 tablespoon cold water 3 egg whites 12 cup boiling water 6 tablespoons sugar 1 teaspoon vanilla pinch of salt Blend cornstarch and cold water. Add to boiling water and cook while stirring until clear and thick, cool completely. Beat whites until foamy, gradually add sugar and beat until stiff. Add vanilla, salt and cornstarch mixture; beat well. Spread over pie filling and brown in 350 degree oven; about 10 minutes. Crust: 2 cups flour (heaping) 12 teaspoon salt 1 cup shortening (lard) : 12 cup water Note: I put rolling pin in freezer for an hour before using Mix using bread type beaters or mix master, flour, salt and shortening. Spnnkle water on dry ingredients while mixing Place in 9-inch deep pan, punch holes in crust with fork and bake in 400 degree oven for 20 minutes. Pineapple Pie by Julie Hamaker, 1st place adult fruit division Pineapple filling: 2 cans crushed pineapple 12 cup sugar 14 cup cornstarch dash of salt Cook and stir over medium heat until thick. Pour into pie shel and top with crust. Brush with milk and sprinkle with sugar. Bake 425 degrees, 40 to 50 minutes or until lightly browned 2-crust pie pastry: 23 cup plus 2 tablespoons shortening 2 cups flour 1 teaspoon salt 4 to 5 tablespoons cold water Mix ttour and salt and cut in shortening. (Us 4 ice to 1 tn Sweets are tastiest part of Fair Ask anyone what the tastiest part of the Uintah County Fair is and most will tell you it's the homemade home-made pie and ice cream contest This year the county's best pie and ice cream makers came together togeth-er on Saturday, Aug. 13, the last day of the Fair. There they entered the best of the best sweets for the judges to taste. (What a great job)! Awards were given to the top three pie makers in two different categories and two separate age groups: youth and adult. Taking first place in the youth fruit pie was Emily Hamaker with her apple pie. Second place went to Emily Foley for a summer berry pie, and third place went to Sheree Allied for a raspberry cream cheese pie. Alarm Searle earned first place in the cream and custard pie category for her fruit ring cheesecake. Alina Allred received second place for a French velvet pie and Nikki Robbins earned third place for a watermelon fluff pie. Julie Hamaker received first place for a pineapple pie in the adult fruit category. Hilda Arias and Mickie Allred tied for second place entering enter-ing a date pecan and strawberry pie, respectively. Third place went to Dorraine Robbins for an old-fashion crumb apple pie. The only male winner was Glenn Andersen for his lemon meringue pic. Andersen received first place in the adult cream and custard pie category. cat-egory. Mickie Allred earned second for a chocolate marshmallow pecan pie and Tiffany Dofelmier third place for a 4-D chocolate pie. David Gardner received first place in the youth uncooked ice cream contest for his root beer float ice cream.
