Rum Bunnies Private Club officially brought the beach to the mountains in the form of palm trees, Iropical rum drinks, servers in sarongs and bikini tops, and bar tenders in Hawaiian shirts. Bikinis yes. but "beach inspired11 not "bikini bar." It's a clarification that might sound trivial, but co-owner of Rum Bunnies Grill and Bar Sandy Blankcnship insists she speaks for all four coowners when she says that the intention is not to make Rum Bunnies a "meat market," but a place that appeals to women as well as men. "We want to keep the bar classy and upscale - this is not another Hooters," she explains. "We want women to feel comfortable and to come here on a girls' night out." The private club is the sister .establishment to Rum Bunnies Grill, which replaced the Town Lift Cafe next to the Town Lift. The Grill opened in June, and has done quite well, according to Blankenship. "Best breakfast in town, I'm told," she said. Rum Bunnies private club will pick up where the grill leaves off: Right now, the grill closes at four p.m.,when the private club opens. The menus, however, are not the same: while the grill serves omelets and burgers, the club will be serving seafood dishes and appetizers. Blankenship owns the bar with her husband, Alan Blankenship, Brad Stuart and Brad Moire. Stuart is the only owner that lives in Park City, according to Sandy Blankenship. The others live in Minnesota. Stuart has lived in Park City for nearly three years, managing two vacation properties owned by the Blankenships. Rum Bunnies will also be smoke-free, which Stuart says works well, since most visitors are used to smoke free bars and restaurants and appreciate the clean air. Besides, most smokers, he says, enjoy going outside on the patio. The original idea for bringing a beach theme to a mountain town came from Rum Bunnies Bar and Grill manager Steve Aldous, who says he has already hired a few bar lenders and seven servers willing to wear the bikini-sarong uniform. "Our philosophy here is for girls to feel comfortable serving, and every girl we hired feels comfortable in our uniforms," he said. "We're planning to have themed nights and bring in live music," he says. "In general, there's nothing too serious about this bar, we want to keep things light." Drinks on the menu include cocktails adapted from island bar menus, with names like "Jamaican Me Wavy," "Chocolate Rum," and "Hawaiian." Drinks will be garnished with fresh tropical fruits and gummy fish. Sandy Blankenship anticipates the private club will definitely pick up steam. "Park City is getting busier and busier every year - I think it's because people were exposed to the town during the Olympics. But I also think more and more culture lovers and nature lovers are finding out about the town as well," Blankenship said. The Blankenships have been looking for a business space in town for years and like the idea of Rum Bunnies, she explains, because it's unexpected. "I think that Steve came up with a very original idea for us that people will enjoy: come in off the slopes from the cold, and get warm and toasty," she said. According to the owners and manager Aldous. a grand opening is slated for some time in October. Rum Bunnies Private Club and Grill are both located at 825 Main Street.
