Show Homemaking Department Of Farm Security Provides Fine Service By MABEL JAR VIS Just what the Farm Security home making department is doing for its constituents was cleary demonstrated last Friday at Short Creek, where the supervisor, Mrs. Eleanor S. Smith made one of her official visits. Notified beforehand of the date of her visit, a group of the women assembled at the 'home of Mr. and Mrs. McCloyd Lauritzen for the afternoon to have their pressure cookers properly tested before the heavy part of the canning season comes on, and to discuss with the supervisor various problems of canning, and other propects connected con-nected with home making. Among the pressure cookers tested some were found not to be registering proper pressure and a careful check was made of the possible cause, petcocks were cleaned, the needed adjustments of time and pressure worked out, and Continued on page five) Farm Security Service (Continued from first page) one of the men present, Homer Maroney. Any repair parts needed need-ed were checked for ordering. Numerous Suggestions Numerous suggestions for meeting meet-ing incidental canning problems, such as slightly oiling the pressure cooker lid to prevent sticking; the need of allowing sufficient time for complete heating through of fruits when they are cold packed to prevent enzymic action and darkening of the fruit, and a dozen other small items that mean so much to the housewife were answered, the women also contributing suggestions from their experiences. Mrs. Maroney told of her experience in pressuring pressur-ing milk in glass containers, and answered several questions on the making of cheese, an art which she is expert. Suggestions for numerous problems prob-lems in home sewing were made, also processes of fruit drying, sulphuring sul-phuring and other home food processing proc-essing were discussed. When Mrs. Smith visits the group again it will be to give a demonstration in furniture repair and uphol-tering. uphol-tering. It was really an inspiration to your correspondent to note the interest of these women in every phase of the afternoon's work, and to see how the FSA program provides pro-vides the home education for families fami-lies in outying districts who would be unable to attend short-term schools in larger centers. |
