Six quarts water, wa-ter, one and one-half pounds beef shank, one pound pig knuckle, one pound split peas, two onions, sliced. Crack the bones and cover with cold water. Add the peas and bring slowly to a boil. Boil steadily stead-ily for about four hours, removing the scum as it rises. As the soup begins to thicken, cook slowly in order not to scorch. Add the onions about one hour before the soup is done. |
