Show holstein Cows as Milk and Butter Producers By common consent the diary cows were formerly classified in such a manner I as to permit of the Jerseys and Guernseys holding the places of honor as special butter producers while the honor of being be-ing deepest milkers was given to the Holsteins HolsteinFriesian and Ayre shires The Holstein breeders at their last Convention expressed themselves satisfied with the position held by that breed for the production of milk being willing to allow the Jerseys the honor of being adapted to butter production with small production of milk The Jersey breeders however were not satisfied with their position and endeavored to impress upon the farmers a claim that the great yields of milk from the Holsteins Hol-steins were lacking in fat and other sol ids until at last l tney forced the breeders of Holstein to meet them in several public I pub-lic tests the results of which were disastrous dis-astrous to the Jerseys First the cow Mercedes vanished Mary Ann of St I Lamberts the champion Jersey cow of America and finally both breeds met at the great Jiary show in New York seven I Jerseys competing with six Holsteins 1 The Holsteins won both first and second prizes for the largest yields of butter Clothilda producing two pounds 7K ° unces i in twenty four hours and Clothilda fourth producing 2 pounds 7 ounce For the quality of the butter both in large and and sinall lots the Holsteins also won their share of prizes But the I HI Holstein proved themselves superior to I all breeds for yield of milk they taking I all the prizes the cow Lady Fay giving I in twentyfour hours nearly CO pounds of I milk about thirtythree quarts a feat I which was not even attempted by the I I Jerseys As a breed of cattle the IIol I steins have achieved greater success than any ever introduced in this country At the Chicago fat stock show they won II I a number of premiums over the shorthorns short-horns Herefords anl polled breeds as well as competing successfully in dressed I carcasses There may not be such a breed as a general purpose one but I when the Holsteins secure the highest honors for both milk and butter as well as compete with the best beefproducing I breeds for quality of beef they certainly I make a nearer approach to being a gen j I eral purpose animal than any other Sneers may be cast at them and the richness rich-ness of their milk derided but in every congest they have come out victorious andeach succeeding year they surpass previous recordsSt Louis Globe Democrat Demo-crat |
