She also shares curried chicken for those who enjoy the flavor of curry, an interesting entree. THERE IS also a Texas barbecued barbe-cued beef, spicy and marinated overnight for blending flavors. She has a variety of delicious desserts, the easy cherry squares, Miami Beach birthday cake, rocky road fudge bars and chocolate ice cream dessert. The ice cream dessert has vanilla wafers for a crust, chocolate choco-late with margarine and eggs, nuts and finally vanilla ice cream, ready for serving to finish a good meal. PARKERHOUSE ROLLS 2 cups lukewarm milk 2 Tbsp. yeast Vi cup warm water 'i tsp. sugar 2Vi tsp. salt 1 stick margarine 2 eggs cup sugar 7'2 cups flour SOFTEN yeast in warm water and the Vi tsp. sugar. Melt margarine margar-ine and add milk, sugar and yeast. Add beaten eggs and mix well. Add flour gradually and when smooth knead until satiny and smooth. Place in greased bowl and let rise until double in bulk, punch down and let rise a half hour. Punch down and roll, cutting and folding for parkerhouse rolls or in desired shapes. Let rise until double and cut at 375 degrees for about 10 minutes mi-nutes or until light brown. CURRIED CHICKEN 1 Tbsp. curry powder or less 1 Tbsp. butter 1 onion, minced 2 stalks celery, diced Vi cup mushrooms, sliced 1 cup apple, diced Vi cup beef broth or bouillon 1 cup light cream 1 cup milk 2 Tbsp. cornstarch 2 Tbsp. cold water 2 cups chicken, cooked, diced Salt to taste SAUTE CURRY in the butter until un-til browned and stir in onion, celery, cel-ery, mushrooms and apples. Mix well and add broth and bring to a boil. Stir in cream and milk and bring just to a boil. Combine cornstarch corn-starch with the 2 Tbsp. cold water and add to sauce, stirring constantly constant-ly and cook until thickened. Stir in the cooked chicken and serve. Serve curry over cooked rice with bowls of topping to sprinkle over the rice and sauce, as desired for favorite toppings. FOR TOPPINGS use onion rings, sliced bananas, fried crumbled crum-bled bacon, raisins, peanuts, coconut, coco-nut, sunflower seeds or sliced avocado. avo-cado. Serves 4-6 good portions. TEXAS BARBECUED BEEF 3-4 lbs. boneless chuck pot roast Celery salt Onion salt garlic salt meat tenderizer Vi-4 oz. bottle liquid smoke Vi bottle Worcestershire sauce, 10 oz. size Vi bottle barbecue sauce, 18 oz. bottle. ONE DAY before serving and cooking, sprinkle both sides of meat with garlic salt, onion salt, celery salt and meat tenderizer. Pour liquid smoke over meat and wrap in foil or saran wrap to seal tightly. Place in refrigerator overnight. over-night. Four hours before serving time, salt and pepper meat and pour Worcestershire sauce over it, then reseal and bake in the foil for three hours for 323 degrees. Remove from oven and pour the barbecue sauce over meat, then reseal in foil and bake for another hour until done. EASY CHERRY SQUARES 1 square margarine 2'j cups sugar 4 eggs 1 Vi tsp. salt 1 tsp. vanilla 1 tsp. almond flavor 3 cups flour 1 can cherry pie filling COMBINE margarine, sugar and beat until fluffy, add eggs, one at a time, beating well. Add falvorings and flour and stir in until well mixed. Spread three-fourths of this batter bat-ter in a greased 10x15 inch pan or cookie sheet and spread cherry filling fill-ing evenly over batter. NOW DAB remaining batter over cherry filling and bake at 350 degrees for 35 minutes. Cut into squares and serve with sweetened whipping cream. Serves 12-15. MIAMI BEACH BIRTHDAY CAKE 1 Vi cups sugar Vi cup butter softened 2 eggs 1 tsp. vanilla 1 V cups buttermilk 2 cups flour 1 tsp. soda 1 tsp. salt 13 cup chocolate chips, melted CREAM SUGAR and butter, beat well and add eggs, beating until un-til fluffy. Add melted chocolate and vanilla. Add dry ingredients with milk, mixing well and pour into two greased 9 inch cake pans. Top with following crumb mixture. 23 cup chocolate chips Vi cup graham cracker crumbs 13 cup butter, melted Vi cup nuts, chopped MIX WELL the entire crumb ingredients and sprinkle over the two pans of cake batter. Bake at 350 degrees for 30-40 minutes until done. At serving time top with sweetened whipped cream. ROCKY ROAD FUDGE BARS Vi cup margarine 1 oz. semi sweet chocolate chips 1 cup sugar 1 tsp. baking powder Remove from oven and sprinkle with 2 cups marshmallows, bake another two minutes and remove from oven. Frost with the following follow-ing frosting. FROSTING: Va cup margarine 1 oz. semi sweet chocolate chips 2 oz. cream cheese Small amount of milk MELT THE margarine, chocolate choco-late chips, cream cheese with just enough milk to stir creamy with 2 cups powdered sugar. Add 1 tsp. vanilla and spread over the marshmallows, mar-shmallows, swirling frosting, let cool before cutting into squares, several hours. CHOCOLATE ICE CREAM DESSERT Vi pkg. vanilla wafers, crushed 2 cups powdered sugar 2 sq. melted baking chocolate Vi cup margarine, softened 3 eggs, separated Salt 1 tsp. vanilla 1 cup salted mixed nuts, chopped Vi gallon vanilla ice cream PUT HALF of wafers, crushed, in a 9x13 inch pan. Mix butter, sugar, chocolate, salt, vanilla and egg yolks thoroughly. Now beat egg whites until stiff and fold into the chocolate mixture. Spread over wafer crumbs and sprinkle nuts over the top. Now slice ice cream and place over the nuts, then sprinkle with remaining vanilla wafer crumbs and freeze. Vi cup nuts, chopped 1 cup flour 2 eggs MELT margarine with chocolate chips and add remaining ingredients, ingre-dients, beating well to mix. Spread in a 9x13 inch baking pan and top with the following: TOPPING: 6 oz. cream cheese, softened Vi cup sugar 1 egg V cup margarine, softened 2 Tbsp. flour Vi tsp. vanilla MIX TOPPING well and spread over the chocolate batter in pan. Sprinkle with another cup of chocolate cho-colate chips and bake at 350 degrees de-grees for 25-30 minutes until done. |
