I FAVORITE RECIPE Pat Evans and her son, Erick, enjoy a warm Yorkshire pudding, baked in a muffin tin or a moist applesauce cookie. Eric also enjoys the English-style pudding served with roast beef. Vi cup butter or margarine Vi cup shortening 1 cup brown sugar 1 cup white sugar 2 eggs 2 cups applesauce, thick 2 tsp. soda Vi tsp. salt 1 tsp. each of cinnamon, nutmeg and cloves 1 tsp. vanilla 4 cups flour CREAM BUTTER with shortening and sugars and beat in eggs. Continue to beat until fluffy. Stir in applesauce and remaining ingredients. If desire de-sire add one cup or more chocolate cho-colate chips, nuts or raisins or combine them. Drop by teas-poonful teas-poonful on greased cookie sheet and bake at 350 degrees until done, about 15 minutes. Frost with a favorite frosting, if desired. Makes about 4 dozen, depending on the size. The cookies freeze well after cooling. Pat and Mike Evans are residents resi-dents of Bountiful. PAT ALSO shares a favorite applesauce cookie, moist and spicy, and best with chocolate chips or chopped nuts, or raisins added. YORKSHIRE PUDDING 2 cups flour 4 eggs, unbeaten 2 cups milk MIX ALL ingredients together until very smooth and let the mixture stand for about one hour, stirring occasionally. occasion-ally. Now place a dab of butter or margarine in each muffin cup and put the tins in a hot oven until the butter is melted and starts to smoke. Remove the tins from the oven immediately immediate-ly and while hot fill with the batter and bake at 375 degrees until golden brown. Serve with roast beef and gravy.
