It is absolutely necessary to conserve the wheat and meat supply. Next week some standardized recipes for rye bread will be published so that every woman in Sanpete may know how to make rye bread. It will be a particularly good Victory bread here as rye flour is inexpensive in this county. We may use corn, oats and other cereals for variety, but the. government does not expect us to ship things in, pay a big price for them and use them in place of local stuffs. We need to be careful of transportation as well as of food. Our Allies and our soldiers must have beef and pork and plenty of it to keep up their fighting strength. We must eat less of it, and use other meats, as chicken, fish and lamb. Meat substitutes, such as cheese, milk, eggs, beans, cereals and nuts should be used. In making cheese dishes substitute cottage cheese, it is very nourishing, one pound being considered equal in food value to one pound beef steak. Use bulletins being sent lo your food chairman, "A whole dinner in one dich" and "Make a little meat go a long way." It is said we have more meat in storage now than ever before, but just as soon as the blockades are cleared up and transportation is improved im-proved that will be shipped right out of the country. Our last message from Hoover is, "Go back to the simple life, be contented con-tented with simple food, simple pleasures, simple clothes, work hard, pray hard, play hard. Work, eat, recreate and sleep. Do it all courageously. cour-ageously. We have a victory lo win." |
