Will Soon Be Eating Sanpete Turkey Two million and five hundred thousand pounds of turkey, meat is a lot of turkey, but that s the figure the Moroni Feed company's com-pany's turkey processing plant expects to reach this, season, according to LaMont Blackham. One of the busiest men in the county this week as the processing pro-cessing plant hit peak production produc-tion Mr. Blackham said 4,000 turkeys a day are presently being processed by the Moroni concern. In other words in one day enough turkeys are processed pro-cessed to provide one for every family table in North Sanpete. The processing itself is an involved operation which begins when the turkeys are brought to the plant from the ranches where they have been raised. First they are killed and then given a "semi-scald" in water which is heated to a temperature tempera-ture of 124 degrees. This loosens loos-ens the pin feathers and makes picking easier. They are then sent through two automatic roughers which remove most of 3 the larger pin feathers after vl which they are sent to a room where a group of women pick off the rest of the. pin feathers J by hand. This done the birds are washed, drained and placed in a pre-cooler after which they are graded by professionals who separate them according to government specifications. Finally they're ready for shipment ship-ment to all parts of the country to gladden the Thanksgiving and Christmas tables of Americans Ameri-cans everywhere. Peak production at the processing pro-cessing plant, which began this year's operations Oct. 22, are the first two weeks in November Novem-ber and the first two weeks in December, Mr. Blackham said. |
