Vi teaspoon soda - . . - 1 tablespoon melted butter 2 egg whites, beaten stiff -4 tart apples, cored and sliced, Vi inch thick - . about Vi cup oil for baking 1 cup maple syrup ; Beat egg yolks with honey until smooth arid light. Add yogurt and stir until smooth. Sift together flour, nutmeg, salt and soda. Add to egg mixture. Stir in melted butter, then fold in egg whites. In a heavy iron skillet, put enough oil to measure about XA inch deep. Heat to 370 degrees or until oil starts to smoke. Dip apple into batter, then bake in hot oil until golden brown on both sides. Keep fritters warm until all apples and batter have been used. Serve hot with a small pitcher of maple syrup on the side. Yields about 2 dozen fritters. Fresh peaches, pears, pineapple or bananas may be substituted for apples in this recipe. |
