Cook with two cupfuls of whltw tock, one teaspoonful of minced onion, one small piece of bay leaf, one-hu- lf teaspoonful of salt, h teaspoonful of white pepper. The homemade candy is so much more wholesome and economi-cal that a few recipes for the different kinds will be welcome. Pecan Pralines. Take one pound of brown sugar, two cupfuls of pecan meats, one-thir- d of a cupful of butter, h of a cupful of water. Stir the sugar, water and butter over a slow Are until the sugar is dis-solved. Add the pecans after the boil-ing has well begun. Boll until the mixture forms a hard ball In cold wa- - rer. Drop by spoonfuls on a well- - oiled marble slub or a baking sheet Let the pralines spread until they are about one-thir- d of an' Inch hi thick ness and five Inches in diameter. One must work quickly before they get too hard. One may use d V ' gem pans for molds, if wished, then the candies are uniform in size. Angel Dreame. Stir Into five well-beate-egg yolks three-quarte- of a pound of fine powdered sugar, with flavoring to suit the taste lemon, or-ange peel or extract Stir the paste until It is smooth, then add h of a teaspoonful of cream of tartar, with more sugar If it Is neces-- " i sary. Heat a pint of milk to the boiling point and pour It over a pint of floue, beat well and add one beaten" egg, one-ha- lf teaspoonful of soda and a little suit. Beat hard till the batter Is very light ; it should be a little thicker than griddle cakes, but not so thick as a drop batter. Mean-while heat lard for frying. Pour the batter Into a funnel, keeping the finger over the hole; hold the funnel over the hot fat, moving It around in rings, let-ting the batter run slowly ; do not per-mit the rings to touch. The cakes will rise to the top when brown, then turn and serve with hot maple sirup or apple butter. Horeeradleh. Apple 8auce With Cream. Make a araooth sauce, cooking six green apples in as little water as t possible and season with one-ha- lf tea-spoonful of white pepper. Add when cooked one-ha-lf cupful of grated horse-radish and one-ha- lf cupful or more ot sugar. Let chill and stir In one cupful of heavy cream beaten stiff.
