Employing the sen-ices of food specialists and nutrition technicians techni-cians of th ehighest skill, Dr. Samuel Sam-uel C. Prescott, special food consultant con-sultant to the Secretary of War assigned to the Quartermaster General's office, is visiting the Pacific Coast. accompanied by other notable food authorities. E. M. Chace, prominent Department Depart-ment of Agriculture chemist, who has done important research on dehydrated foods in the Department's Depart-ment's laboratory at Albany, California; Cali-fornia; R. S. Hollingshead, of the Washington office of Agriculture; Dr. W. V. Cruess, and Dr. E. M. Mrak, both of the University of California; these distinguished experts ex-perts on nutrition will collaborate in the study of established dehydration dehy-dration plants on the Pacific Coast. Concerned mainly with vegetable products, the survey will also include in-clude certain fruit items and dehydrated de-hydrated eggs. Army requirements on dehydrated dehy-drated eggs, for the same period, will approximate 12,000,000 pounds. This latter figure alone, translated translat-ed in terms of truck loads, using a five-ton truck capacity as a unit, indicates . a train of 1,200 trucks which would be required to haul th edehydrated eggs which the Army plans to use fcr the next fiscal year! Present United States facilities have a potential capacity of 181,-000,000 181,-000,000 pounds. |
