The government has already spent tremendous sums of money in distributing distrib-uting literature and sending personal help through agents and demonstrators demonstra-tors to make sure that safe and sane methods in food conservation is used by the American people. However, some women, especially those in small towns and rural districts dis-tricts try to insure success and take cross-cut methods by using chemical preservatives in their home canning. A preservative that has found favor fa-vor in certain parts of Iron county is known as "Mrs. Price's Canning Compound." It is manufauturcd by the Trice's Compound Company in Minniapolis, Minnisota. It is claimed by its advocates that is guaranteed under the Food and Drugs Act of June 30th, 190(5. The facts in the case are that it reads: "Guaranteed by tht Price's Compound Company," and it is not guaranteed by the government. Dr. Harvey W. Wiley, formerly in the government pure food department says of Price's Canning Compound: "The compound consists principally of borax with some btpiotf acid and salt. The chemical preservatives named are deleterious to health and should never be used in n food product. pro-duct. In my opinion these preservatives preserva-tives should be prosecuted, and the government has made an effort to do so, but the point involved is a technical techni-cal one and so the law is evaded. I would forcibly endorse the efforts of the Minnesota Food Commission to educate housewives out of their error, and to raise the standards of the commercial products.
