Show A HARD KNOCK ON INNOCENT ? CIDER! i Federal Prohibition Director Issues , Letter of Information on This Much Debated Question. Salt Lake City, Mardi 18, 1920. To set at rest various stories and to answer numerous inquiries regarding regard-ing the manufacture and snlo of cider, I beg to give the following statement tho widest publicity through tho columns col-umns of your paper: The Nationnl Prohibition Act provides pro-vides thnt no liquor shall bo sold for beverage purposes which contains onc-hnlf of one percent or more of alcohol by volume. A "liquor" is construed con-strued to include practically any liquid or compound by whatever nnme called containing one-half of one per cent or moro of alcohol by volume fit or which may bo used for beverage purposes. Cider may bo manufactured by persons per-sons desiring to convert samo into vin-egar. vin-egar. When this is done, a permit from the Director must be obtained for such act. Sweet cider containing less than onc-hnlf! of one per cent of alcohol by volume mny be manufactured and sold without tho necessity of obtaining a permit, provided such product is put up nnd marketed in Bterile closed containers con-tainers or is trentcd by the addition of benzonte of soda, or other substanco which will prevent formentntion, to such proportion as to insure the nlco-I nlco-I holic content remnining below one-I one-I half of one per cent of alcohol by vol-Ume. vol-Ume. In tho manufacture of cider, sugar or other fcrmentnble substance must, under no circumstances, be added to the applo juice for tho purpose of increasing in-creasing the alcoholic content, inasmuch inas-much ns such practico is held to constitute con-stitute the production of a mash fit for distillntion within the prohibition of section 3282, Revised Statutes. It is evident, from reports received by the Director, that more care will hnve to bo exercised by people making cider so as to keep strictly within the spirit, as well as the letter, of the law.
