CTC, Pork Industry Group, 444 -- North Michigan Avenue, Chicago, IL 60611. jyK Martha Trejo, Sally Mauro elementary r ! 1 PORK CHOPS PLUS SPINACH PARMESAN POTATOES package (lOoz.) frozen spinach 1 1 egg 2 tablespoons sour cream 2 large pork loin chops, about inch thick slices dry bread, broken into nickel size pieces 2 ounces chopped mushrooms (taken from 4 ounce can) drained, juice reserved teaspoon dried parsley 'a teaspoon salt dash pepper dash garlic salt '4 cup evaporated milk 2 tablespoons cooking oil (10' 2 ounce) can cream of mushroom soup sour cream 'a soup can of milk (5 oz. ) cup American cheese, diced Split pork chops horizontally from outside edge to bone, forming a pocket. (Or, pork chops can be special ordered with pockets from your meat market). Combine bread, American cheese, 2 ounces mushrooms, parsley, salt, pepper, and garlic salt. Pour half of reserved mushroom juice and evaporated milk over the mixture to moisten. Stuff each chop with '.2 cup stuffing and secure edges with skewers or toothpicks. Brown chops on both sides in cooking oil over a medium heat. Place browned chops in an 11x9x2 inch baking dish. To make sauce, combine mushroom soup, half soup can of milk (5'4 ounces) and remaining chopped mushrooms. Pour over chops. Bake, uncovered, in a 350 degree oven for 30 minutes. Just before serving, garnish with dollops of sour cream. Note: This dish may be prepared ahead of time and refrigerated or frozen. Stuff and brown chops as directed. Place in freezer to oven dish, cover with mushroom sauce. Wrap dish in heavy aluminum foil; freeze. To serve, remove dish from freezer 1' hours before serving time. Bake, covered, in a 350 degree oven for 30 minutes Uncover and bake an ad ditional 30 minutes. Garnish as directed. Yield: 6 servings (1 chop each). tablespoons Parmesan cheese salt, pepper, nutmeg 6 baked potatoes, mashed 6 S id 3 Scrub large, oval baking potatoes. If you like tender skin, rub with a little salad oil. Puncture with fork in a few places. Bake on bottom rack of minutes or till tender. Cut a shallow oven, unwrapped at 400 degrees slice off the top of each potato. Scoop out fluffy potato with a spoon; keep bottom skin intact and reserve. Discard top skin. Mash hot potato in a bowl, whipping into each potato tablespoon butter or margarine and 2 tablespoons hot milk. Heat spinach; drain dry. Combine with remaining ingredients. Pile into potato skins; sprinkle with additional Parmesan. Heat 15 minutes at 350 degrees. Hark the Herald Angels sing.
