Review Correspondent The week after Thanksgiving is the perfect time to make those delicious fruitcakes that everyone enjoys so much at Christmas and New Years. Those weeks between the time theyre baked and served allow the cakes to blend and mellow so the flavors are just right. When making fruitcakes, keep in mind these pointers for the best fruitcakes ever: Always line your pans with brown paper which has been greased on both sides. Put a pan with about two cups of water on the bottom shelf of your oven while the cakes bake and they will have more volume, better texture and a shinier glaze. Cool fruit cakes in the baking pans then carefully turn out onto a rack. After the cakes have cooled, they should be wrapped in plastic wrap or foil and allowed to ripen for a few weeks. If you like the flavor of brandy or sherry in your cakes they can be wrapped in cheesecloth which has been dipped in the beverage desired and allowed to ripen. If you try this, be sure not to pack them in too tight a container or the alcohol will not be able to evaporate and you 1 In either case, the paper which was used during baking can be left on during the ripening time. Chill your cakes before serving and they will cut into thin, whole slices. The family moved to West Layton when he was a young boy and later moved to Kaysville. As a young man he worked on farms and ; ranches in Utah and Nevada. After his marriage, he worked for Kaysville City as marshal, fire chief and city utilities superintendent all at the same time. Later he worked for Ogden Arsenal on the guard force, as saddler for the mounted guards and also rode the rough string of cavalry remounts. ; They later moved to Nevada and he worked as foreman for the Peterson Brothers regis-- I tered Hereford cattle ranches. The family moved to Wells, Nev., and went ; into the shoe and saddlery business where Mr. Bloxham made and repaired saddles, harnes-- ; ses and bridles. They moved to Elko, Nev., in 1952, and Mr. ; Bloxham worked 21 years as Elko County road for Elko supervisor and was fire County, Nevada state, and the U.S. Govern-- ; ment. . (1V6 cups packed) lVh cups granulated sugar 12 eggs, beaten Vi cup light mollasses Use only the best of fruits and nuts. Cut pineapple and citron into thin match-lik- e strips. Cut the cherries into eights and dates and figs into pieces similar in size to the cherries. Put fruit and nuts into a large bowl. Make the syrup and pour over the fruit with the lemon juice and the fruit juice. Stir, cover and let stand overnight stirring 2 or 3 times with a wooden spoon to moisten fruit evenly. , Have all ingredients at room temperature. Sift flour and measure, resift three times with next 5 ingredients. Cream butter, then add sugars gradually, creaming well. Stir in beaten eggs then beat until fluffy. Next stir in molasses, then add flour mixture in 3 or 4 portions, beating well after each. Turn batter over fruit, scraping it all out with a rubber scraper. Now mix with hands or a sturdy wooden spoon lifting fruit up through the batter until well distributed. Prepare pans by lining with brown paper a described above. Fill pans compactly with batter to within V inch of top. Press down and smooth with a spatula, then pat milk over top to form a thin film. Place pans on baking sheets and put on the bottom shelf of your oven. Put water on the baking sheet to a depth of about V inch. Bake in a very slow oven, about 250 degrees for 3 hours, time depending on size of pans or until cake tests done with a toothpick, Be careful not to scorch. Cool cake in pans on cake racks and then remove from pans but leave paper on the sides. Decorate as desired and wrap in moisture proof wrap. Yields about 11 pounds. 1 MRS. The ceremony was performed in the Salt Lake LDS Temple. The bride is the former Robin Murray, daughter of Mr. and Mrs. Evan G. Murray of West Point. Parents of the bridegroom are Mr. and Mrs. Ray Chapman of West Point. A reception was held at the West Point Stake center. Attending as maid of honor was Murray. best man was Gary Chapman. The bride graduated from Clearfield High School and LDS Seminary. She is attending Weber State College and is employed at Clearfield Auto. Chapman graduated from Clearfield High School and LDS Seminary. He is employed by National Distribution Systems.
