V cup unsweetened sauce cup sugar STRAWBERRY 1 Strawberries alone seem to be the fitting crowm for shortcake berry shortcake, that is, heaped with plenty of fresh cream. SHORTCAKE By DONETA GATHERUM 773-497- 6 The strawberry is one of the most economical, versatile and delicious of all early summer fruits. Fresh berries should be clean and bright in appearance with a full solid red color. They should be free from moisture, dirt and trash and the cap should be attached. BECAUSE strawberries are 90 percent water they cannot be stored even in the refrigerator for very long without losing flavor and texture. from the store or garden should be carefully handled. When washing the berries leave the caps on so flavor will be retained. The following recipes are easy to prepare and are appropriate to serve for lunceons or dinner parties. Straw-berrri- Note: For variations top the cake with bananas, other berries or pineapple rings with cherries in the center. . ERDBEER TORTE STRAWBERRY PIE By Elizabeth Coombs For the crust combine sifted flour, 1 cup cup sugar and a yolk and V tsp. vanilla. Mix. d of the mixture on Pad the bottom of a 9 inch spring form pan. Bake at 400 degrees for 8 minutes. Butter the sides of the pan and pad the remaining ingredients on the sides of the pan so the dough is about IV inches up the sides. Fill the center with Cheese Cake Supreme mixture. MRS. Top the cake, strawberries and glaze with whipped cream. gal. vanilla ice cream Wi cup flaked coconut 2 cups frozen whole straw- berries USING A small scoop make balls of the ice cream. Set each ball as shaped onto a tray in the freezer. Spread coconut on a large sheet of waxed paper. Roll ice cream balls in coconut and coat lightly. Return to freezer. Top snowballs with a strawberry. Add additional berries to the side of the ice cream as a garnish to serve. Makes 10 to 12 servings. STRAWBERRY SHORTCAKE one-thir- Five 8 oz. pkg. cream cheese V tsp. vanilla V tsp. grated lemon peel V cup sugar 3 Tbsp. all purpose flour . . V tsp. salt 5 eggs plus 2 egg yolks : ' V cup cream . 4-- . ALLOW CREAM cheese to stand at room temperature to soften about one hour or soften in a microwave oven. Beat cream cheese until creamy and add vanilla and lemon peel. Mix together sugar, flour, salt and gradually blend into cream cheese. Add whole eggs and yolks one at a time, beating after each just to blend. Gently stir in cream. 2 cups sifted enriched flour 3 tsp. baking powder 1 Tbsp. sugar Vi tsp. salt 13 cup shortening 1 beaten egg V cup milk soft butter or margarine 4 cups sugared sliced strawberries 1 cup heavy cream whipped ornon-dair- y topping FRUIT FROSTS . . Puree about one quart of strawberries to make 1 cups . envelope unflavored gelatin V cup cold water V cup boiling water Vi lf 1 straw'- STRAWBERRY SNOWBALLS lf tsp. grated lemon peel. Cut in Vi cup butter or margarine. Add 1 or 2 slightly beaten egg STRAWBERRY PIE By Elizabeth Coombs Add one extra egg to the ingredients listed on a yellow cake mix package. Mix the packaged cake according to the directions on the box. Divide the bitter into two round bak- -' ing pans and bake. Turn the cake upside down on a plate and cover with strawberries dipped in sugar. Glaze with a red or a clear glaze poured over the top. Turn into crust lined pan and bake at 350 degrees for 12 minutes. Reduce heat to 300 degrees and bake 55 minutes or hour. until done. Cool Loosen sides with spatual. hour longer and Cool one-haremove sides of pan. Cool two hours longer. Top with fresh strawberries. Pour strawberry glaze over the berries and add whipped cream. one-ha- CHEESE CAKE SUPREME . apple- PUT STRAWBERRIES through a food mill to make puree. Add applesauce and sugar, soften gelatin in cold water. Dissolve in boiling water and add to fruit mixture and blend. Makes 1 Vi quarts. To freeze in ice cream freezer fill 2 quart can, place in packed ice and salt. Turn until mixutre is fairly stiff. Remove dasher and cover can with waxed paper and replace the lid. Spread bottom layer with butter. Spoon strawberries and whipped cream between layers and over top. Cut into wedges and serve warm. Makes six large servings.
