While this luscious supply, ase your imagination to create flavorful rolls and pastry, colorful salads and elegant desserts. One such dessert, which is sure to please family and guests alike combines fresh peaches with pistachio ice cream and boysenberry syrup. Bottled fresh, spiced,' transformed into jam or marmalade, or frozen, peaches lend themselves to preserving.- v. , ful 1 'A taste treat. . Fresh Peach Coupe v. California fresh peaches cup sugar 14 cup kirsch (optional) 1 quart pistachio ice cream Boysenberry syrup Peel, halves and stone peaches; sprinkle them with sugar. Pour kirsch over fruit and let stand 10 minutes. Arrange 2 peach halves in glass bowls or coupe glasses. Fill halves with scoops of pistachio' ice cream. Whether a little or a lot is saved by canning peaches depends upon the cost and quality of the fruit. Either way you come out ahead. Select sound, medium-size- d unbruised, firm, fully-rippeaches, sweeten them as you like and you will be richly rewarded in terms of satisfaction. If possible, choose freestone peaches for canning. They are easier than clings to pit and peel. You will need 214 to 3 pounds of peaches for each quart to be canned. With possible exceptions of something to use as bath canner and a jar lifter, every a boiling-watreasonably well equipped home kitchen has air the utensils needed for canning peaches. A canner is a deep kettle or pot for processing (means cooking) jars of food. It must have a lid and be deep enough for water to cover tops of jars one or more inches without boiling over. It also needs a rack to hold jars a bit above the bottom. Use regular home canning jars. Reusing commercial food containers is risky business, as the sealing surface of many of them i3 not right for a home canning lid. Also, beware of old fruit jars.
