Christmas and cooking go hand in hand, especially when ;Mom is in the kitchen stirring up batches of holiday memories, .'and such a "Mom" is Lou Gene ."Kirkham, our Featured Cook of ;? the Week. Lou Gene is famous for her J cooking art, and graciously consented to share some of her traditional recipe treasures with 'us. She has been pleasing her ' husband, Gene, and her four ; lucky children, Peggy (Mrs. Ho- ward Adams), Danny, Laurelee, J (Mrs. Ken Worley), and Glade, i with the delicious dishes she T creates especially for them. When we contacted Lou Gene, she was right in the middle of making a big batch of Divinity J; and she is sharing this recipe saying, "This recipe has been in f. the family for many years." Divinity I 3 c. sugar, 23 c. white syrup, 2 c. hot water, pinch salt. Cook these four ingredients to 235 or soft ball stage, pour 13 of the mixture into two stiffly beaten egg whites. Cook the rest until 260 or hard ball stage. Continue beating, add 2 teas, vanilla, 1 c,( nutsniOrop,,frpni teaspoon onto wax paper' to cool. Black walnuts are especially good and c. chopped maraschino cherries. Add food coloring if desired. There are many variations to making this recipe. Caramels 4 c. sugar, lb. butter, NOT margarine, 2 c. white syrup, 2 tall cans evaporated milk, 1 teasp. vanilla, 1 c. pecans or walnuts. Stir sugar and butter in heavy saucepan over medium heat until it boils well. Add evaporated milk a little at a time, so mixture never stops Stir CONSTANTLY boiling. with wooden spoon. Cook to stage where a little caramel dropped into cold water makes firm ball that is slightly chewy, but not as firm as finished caramel, about 240. Add vanilla and nuts and pour into buttered pan 9 x 13. Do not scrape sides or bottom of pan. Cool and cut into squares. Wrap individually or dip in chocolate. "This recipe I cut from the newspaper years ago when was first married. I am still using the original, the ; - 1 paper but it . . . is brown and has spills on, is special because it tur- ned out to be a recipe used several times a year, not only at Christmas. It takes at least one hour of stirring, but it is well worth the time. Try it, you'll see what I mean," Lou Gene confides. Garlic Dip 2 large pkg. Philadelphia Cream Cheese, 1 can minced clams, 1 can shrimp, 1 T. minced onion, g teap. garlic powder, 2 T. Worchestershire sauce. Beat cheese until smooth, using the juice from clams and shrimp if necessary. Beat in garlic pd., onion and Worchestershire sauce. "This recipe came from my husband's Aunt and is another food I prepare to give at Christmas time. If you take this dip to a party, you will be the "Star." It is good with chips, crackers, pretzels, etc. If you are on a diet and want to serve a dip with raw vegetables try I pkg. cream cheese (softened), I beef boullion cube dissolved in a little warm water - beat into cheese and serve with raw vegetables. I use this recipe often and I have served these to Relief Society parties with a baked potato, salad and roll. It makes a good meal. I am always trying new recipes if they sound like my family might enjoy them. But I use the good old reliables most of the time," Lou Gene said.
