Show Tilt: V 'v , r A The University of Utah choir will join the Bear River High School A Capp-ell- a Choir in a joint concert Feb. 24 at 8 p.m. in the auditorium. The University Choir is under the direction of Dr. Newell B. Weight. The choir has a long tradition of excellence in choral artistry through television Y, .'" r, March in Salt Lake City. The choir was selected through a taped audition. The conference will bring together music educators from all the western states, along with national compos- ers. The A Cappella choir will perform musical selections at the joint concert which it will also perform for the convention. Choir members will be handling ticket sales. Admission is $1. University choir director, Newell B. Weight was Chairman of the Music Department of the University of Utah in Salt Lake City from 1968 to 1973. He is founder and director of the University Choir and Musical Director of the Utah Chorale, official chorus for the Utah Symphony. The University Choir has made two six week tours of western Europe, one in 1971 and one in 1973. The Chorale has made many professional recordings with the Utah Symphony, the latest of which were the Berlioz Requiem and Belshazzer's Feast by William Walton. appearances, recordings, performances throughout the state and nation and abroad. After presenting the initial portion of the program, the University choir will be joined by the A Cappella choir on the program. The Bear River choir has been chosen to perform for the Western Division Music Educator's conference in 4 cup flour, 1 teaspoon salt, V teaspoon pepper, 1 and pounds round steak ( inch thick), 2 tablespoons cooking oil, 3 medium onions, sliced, 1 cup water, 1 tablespoon vinegar or lemon juice, 1 clove garlic, minced, 1 bay leaf, Va teaspoon thyme. Combine flour, salt, and pepper; pound into meat with the back of a knife or meat pounder. Cut steak into serving-siz- e pieces. Brown meat in hot oil. Top with onion slices, stir in remaining ingredients. Simmer in electric frypan or-osurface unit for about an hour or until tender. Drippings make delicious gravy. NOTE: Can also be done in a pressure cooker-aft- er proper pressure is reached, crok for 20 minutes. n JUMBO RAISIN COOKIES 2 cups raisins, cup water, cup shortening, 1 cup white sugar, 1 cup brown sugar, 3 eggs, 1 teaspoon vanilla, 4 cups flour 1 teaspoon baking powder, 1 teaspoon soda, IV2 teaspoons salt, IV2 teaspoons cinnamon, V4 teaspoon nutmeg, V4 teaspoon allspice, 1 cup chopped walnuts. Boil the raisins and water together 5 minutes. Cool. Combine shortening and sugars and cream together. Add eggs, vanilla, and dry ingredients. Add chopped nuts, and rasins. (Do not drain the water off the raisins-a- dd it in). Bake at 350 degrees for 8 to 12 minutes. Cool cookies on a wire rack. Makes 5 dozen large cookies. 1 1 RASPBERRY SWIRL TARTS 3 eggs, separated, 1 cup sugar, 1 cup whipping cream, 8 ounces cream cheese, Vs teaspoon salt, 10 ounces frozen raspberries. Beat egg yolks until thick; add softened cream cheese, 1 cup sugar and salt. Beat until smooth and light. Fold in beaten egg whites (stiff) and whipped cream. Blend well. Add raspberries by spoonfuls ana swirl with a fork. Spoon into tart shells or into a pie crust or graham cracker crust. Garnish with a dab of whipped cream and a whole raspberry on top. The Bear River debate squad recently returned home from a "very successful" trip to S.V.S.C. Mrs. Jess (Georgia) Udy of 1275 Centurv Drive, Tremonton, may not have had much to do with horses before she was married but she's become accustomed to them since. "Jess' family all are horsemen,'' she said. "He's been raised with horses since he was little. He had his own horses when we got married." Now he races a cutter team in the winter and enters the flat track races in the summer. He also rodeos and both he and his wife are members of the Sheriff's Posse. Georgia claims she still isn't a horsewoman but does go on the posse rides. She and the couple's one daughter, Natalie, 2, "always go cheer" at the races and rodeos, she added. The cheering, perhaps, comes natural since she and her older sister, Mrs. Wayne Payne, were both cheerleaders at Bear River high school. A graduate of Utah State University, Georgia was once employed by Utah-Powand Light Company in Ogden as a home economist. Her job included giving demonstrations with food, testing new recipes and such. "I went to schools and Relief Societies, women's clubs and and worked with girl scouts," she explained. A home economics major, Georgia feels the things she learned were "more practical" than some of the things colleges teach. "The practical application is a lot harder than reading it from books" though, she admits. A member of the Tremonton Second Ward, Georgia is a counselor in the Primary. She has also taught a mutual class and played the organ in Primary. The couple lived in Ogden for six months after they were married but moved to Tremonton where they live on a acre lot with the horses out back. Husband, Jess, commutes to Ogden where he works for Parsons Ready Mix. Georgia "likes to ski when there's snow." i TIMES. February 17. It77.
