The pnxess of cooking in foil is easy and there are not many things that you could not put in foil and have it taste like you have slaved over a hot stove all afternoon. The meat will come out fork tender, ten-der, veggies will taste garden fresh, and yes, even eggs will be delightful. The only hitch I have found to oxiking in foil is timing. The thickness of your meat and veggies will be the determining de-termining factor to how long your foil packet should cook. Now 1 understand wanting to save a penny or two, but when cooking in foil, please spend the extra buck and buy the heavy duty tin foil. 1 suggest sug-gest buying the extra large size and the thickest you can find. I buy Reynolds Heavy Duty in the long size. It works well. For every recipe I use the . same size of foil, two 14-inch pieces (this does not need to be exact.) I double my foil to save the first layer from possibly pos-sibly leaking and creating a mess in the oven. Spray your foil with cooking cook-ing spray to avoid sticking. When folding your food in foil, leave enough room for the heat to circulate. Fold the foil over on the top and then fold the sides in. You want this to be a tight seal. When removing your foil packet from the oven, cut open with caution. The steam is hot! You may cook this recipe in your oven or on your barbecue barbe-cue grill. Barbecue Chicken and Cheddar Dinner (Makes 4 packets) 1 8 Tablespoons barbecue sauce 1 4 small boneless skinless chicken breasts 1 2 unpeeled red potatoes thinly sliced 1 1 small green onion finely chopped 1 1 small green bell pepper seeded and finely chopped 12 tsp salt 1 172 tsp pepper 1 1 12 cups shredded cheese i f ; v :. ', Preheat oven to 400 degrees ; ' "' l. Place in a double lined piece of tin foil sprayed with cooking-spray i ; 1 1 Tablespoon barbecue sauce Place one chicken breast over sauce and spread another tablespoon barbecue sauce on top of chicken. Top with quarter of the potato, bell pepper and onion. Sprinkle with salt and pepper. pep-per. Fold foil to cover contents leaving enough room for air to circulate. Repeat with remaining remain-ing ingredients to make three more packets. Place on a foil lined cookie sheet. This just helps to prevent a leak from getting your oven dirty, if one does occur. Bake for 35 minutes then open foil packets carefully and sprinkle with cheese. Return to the oven with foil open and bake for an additional 2-3 minutes. Enjoy.
