"First, we're open to the public even though the golf course went to private membership. member-ship. Second, diners will find some of the best food and best views of any restaurant in the area when they eat here." The restaurant's main dining room occupies the upper level of the Park Meadows Golf Course clubhouse, with views of all three ski areas across the snow-covered fairways. Chef Robert "Bob" Murphy, long-time area resident who returned recently from a 12-year absence, has assembled a menu which emphasizes the best products prod-ucts available each day. He says the major influence of his food preparation is "simple bistro American food," with a heavy dose of New England cooking. "I try to prepare dishes not commonly found in town, such as fried clams and stuffed lobsters," Murphy said. Eberlein added that the Double Eagle's soups seemed especially popular. "Bob's 'Clam Chowda' draws a lot of positive comments. It's a thick, hearty chowder with clam, onions and potatoes, a true New England soup," he said. He added that they will also prepare gourmet dishes ready to cook for pickup by the person who would like to cook and serve it at home. The restaurant, which is open seven nights a week, can seat more than 100 people on the main level, and another 250 downstairs. It has already been picked to serve a number of large groups such as the America's Opening World Cup Race banquet and the s Huntsman , Cup dinner.
