Chile Rellenos Casserole 1 pound ground beef to cup chopped onion Vi teaspoon salt Vt teaspoon pepper 2 4 -ounce cans green chiles, cut in half crosswise and seeded Hi cups shredded sharp cheddar cheese Vi cup all-purpose flour Vi teaspoon salt 4 eggs, beaten 1 Vi cups milk V teaspoon bottled hot pepper sauce (optional) CLIP 'N' COOK Coplay Naws Servlca BROWN BEEF AND ONION in skillet; drain off fat. Sprinkle meat with salt and pepper. Place half the chiles in 10x6x 14-inch baking dish; sprinkle with cheese; top with meat mixture. Arrange remaining re-maining chiles over meat. Mix flour and salt in bowl. Combine eggs, milk and hot pepper sauce. Add egg mixture to flour gradually, beating until smooth. Pour over meat-chile mixture. Bake in preheated pre-heated 350 oven 45 to 50 minutes or until knife inserted just off center comes out clean. Let cool 5 to 10 minutes; cut in squares to serve. Makes 6 servings.
