Veterans recognize Golden Corral owner By Janine Shannon Express Writer Several members of the Disabled American Veterans (DAV) in Vernal presented a clock to the owner of Golden Corral Thursday to show then-appreciation then-appreciation for what he has done for them. For the past ten years, Steve Jones has served a free dinner to veterans and active military the Monday after Veteran's Day and has also shown support in other ways. "We just wanted to give him a little recognition for all the kind things he has done for servicemen ser-vicemen and the DAV," said Hollis Haws, a DAV member. In addition to the free dinner, din-ner, Jones often offers free meals to volunteers who drive DAV members to Salt Lake City in vans. He also supports the Independence Day parade. Haws said Jones doesn't "advertise "adver-tise his support." Jones said the Golden Corral company wanted to find a way to honor the military and thought that a free dinner once a year was a good way to show support. This year, on Nov. 13, the restaurant served about 200 veterans and active military. This number is up from the past couple of years because many of these men and women were previously deployed. Jones said that while the number of veterans they serve each year increases, the number of World War II veterans dwindles each year as many of these men are in their 80s. Featured above the clock face is an image of the Iwo Jima flag-raising, and below are the words, "Steve Jones, a special friend." Haws, Charles Gray, Eugene Searle, and Lavonne Searle of the DAV women's auxiliary, presented the award. The clock is displayed in the main area of the Golden Corral restaurant. May I quote Sunset's editor: "One topic on which diners do tend to be profuse in their praise is dessert. Even so, Chefs of the West remain largely large-ly and mysteriously untempted to abandon the barbecue grill, the casserole, or the stewpot and venture into the area of dessert However, when one of our contributors does send in an applicable recipe, it's likely to be a blockbuster. Composed significantly signifi-cantly of chocolate and butter but-ter enriched by sugar, egg, brandy, whipping cream, and walnuts, it is the sort of confection confec-tion that haunts weight watchers' watch-ers' dreams a recollection of Paradise Lost." So here it is now, my holiday gift especially for you: Truffles Sharon Ingredients: 1 pound semisweet chocolate, choco-late, chopped 1 cup (12 lb) unsalted butter 34 cup powdered sugar 1 large egg 1 tbsp vanilla (or brandy) 14 cup chopped walnuts (optional) 23 cup whipping cream Garnish: about 25 walnut halves (also optional) Procedure: Place 12 of the chocolate in the top of a double boiler. Take great care that no moisture (including steam) comes in contact with the chocolate; choc-olate; otherwise it will "seize" (harden). Remove chocolate from heat and let stand until cool, but still liquid. With a mixer, beat butter and sugar until smooth and fluffy, then beat in the egg and vanilla (or brandy). Add liquid liq-uid chocolate and beat until smooth; mix in chopped nuts. Cover chocolate truffle mixture mix-ture and chill until firm enough to hold its shape when scooped (about 3-4 hours). Shape into generous 1 tbsp.-size balls and place about an inch apart on a wire rack in a rimmed 10x15 inch pan. Cover with plastic wrap and chill at least 30 minutes min-utes or overnight. Wash and dry double boiler top; put remaining chocolate and cream in it. Ladle chocolate over each truffle, guiding the chocolate so it coats the truffle sides as well. Garnish while chocolate is still soft, by resting rest-ing a walnut half on top of each truffle. When all the truffles are coated, return them to the refrigerator and chill just until the chocolate coating is firm (about 1 hour).
