For a delicate, delicious cake, try the Chocolate Ice Box Cake and invite friends over as this is traditional party par-ty fare. You will want to keep some sponge cakes on hand, too, so you can make this up often. Invite friends for Sunday brunch and serve baked Canadian Cana-dian Bacon with Orange Sauce and I know you will enjoy the Sour Cream Coffee Cake. For something not too sweet, try the Scotch Oatcakes, (they are good snack food), and the kids would like making Funnel Cakes- they're fun for company, too. There is something here for everyone. 9 DELUXE CHOCOLATE ICE BOX CAKE Sponge Cake: 3 eggs, separated 1 scant cup of sugar 4 Tbps. cold water 1 cup flour Vz tsp. salt 1 tsp. baking powder 1 tsp. vanilla Chocolate Mixture: 4 squares bitter chocolate 1 cube butter 4 egg yolks 1 cup sugar 4 stiffly beaten egg whites Cream Mixture: 2 small cartons whipping cream Sugar Vanilla Cake: Prepare sponge cake ahead according to directions and freeze. Beat yolks and sugar until very light. Add cold water. Fold in flour, salt and baking powder which have been sifted together. Fold in egg whites and vanilla carefully. Bake at 325' for 30 minutes in a 9-inch square ungreas-ed, ungreas-ed, wax paper lined pan. Sponge cake should be inverted between two racks and completely cooled before removing from pan. Freeze. Chocolate Mixture: Melt chocolate and butter. Beat egg yolks with sugar, blend in cooled chocolate mixture and fold in stiffly beaten egg whites. Refrigerate briefly if not thick enough to spread. Layering cake: Cut thawed sponge cake in half, vertically, having two loaves. Using a sharp knife, cut one loaf into as many thin layers as possible. possi-ble. Whip 1 carton of cream flavored with sugar and vanilla to taste. Starting Star-ting with the bottom layer, spread a thin layer of the chocolate mixture on it and top with a layer of cake. Build up layers alternating chocolate filling and whipped cream, ending with top piece of cake. Treat other loaf the same; refrigerate. When ready to serve, ice with the other carton of sweetened whipped cream. This recipe is really quite simple when you make your sponge cake ahead and freeze it. The sponge cake easily doubles to have ready to prepare at any time. MOCK RAVIOLI Meat Sauce: 2 lbs. ground meat v 2 onions, chopped 1 clove garlic, chopped 1 10' s oz. can or jar hot sauce 1 small can tomato sauce l's cups water 'i cup sliced mushrooms ' tsp. Italian seasoning Salt and pepper to taste Vegetable Layer: j cup salad oil 1 pkg. frozen chopped spinach, cooked and drained 1 cup bread crumbs 'i cup chopped parsley 1 garlic clove, minced I scant tsp. sage 1 tsp. salt 4 eggs, beaten Pasta: 1 lb. butterfly or bow macaroni i cup grated chws Brown meat, onioni and garlic. I'lae a layer of cooled pasta in an oiled caM-rtle, then layer of spinach mix-lure, mix-lure, then meat tJrprat for 3 Uyert ending with jwta, Top with jyatH Cheese and bake 40 minute in 1 Oven, Serve 8 Id 10. We love all of you. in SWEET POTATO CASSEROLE 3 cups sweet potatoes, about 4 good-sized ones Ms cup sugar cup butter 2 eggs, beaten 1 tsp. vanilla Mi cup milk Topping: Mi cup melted butter 1 cup light brown sugar M cup flour 1 cup chopped pecans Boil and mash potatoes. Mix in sugar, butter, eggs, vanilla and milk. Put in 9xl3-inch baking dish. Prepare topping by melting butter and mixing mix-ing in remaining ingredients. Sprinkle on top of potato mixture. Bake 25 minutes at 350'. Serves 10 to 12. '1 r i i L. SOUR CREAM COFFEE CAKE 1 pkg. Duncan Hines Butter Recipe Golden Cake Mix M cup sugar Vz cup cooking oil ' 1 8-oz. carton sour cream 4 eggs 3 Tbsp. light brown sugar 2 tsp. cinnamon Ms cup finely chopped nuts, optional Frosting: 1 cup confectioners' sugar 1 Tbsp. melted butter 1 Tbsp. milk 1 tsp. vanilla Blend the cake mix, sugar, oil and sour cream. Add eggs, one at a time, beating well after each, using medium speed on your mixer. Place half of this batter in a generously greased Bundt or tube pan. (Shortening is best for greasing the pan, do not use cooking oil as it browns at too low a temperature.) Mix brown sugar, cinnamon and nuts together and sprinkle on top of the batter, trying not to let the mixture touch the sides of the pan. Cover with the remainder of the batter and bake at 350' for about 50 minutes. Test with a toothpick to see if the center of the cake is done. Let the cake stand in the pan for 10 minutes before turning out. While the cake is warm, pour the frosting over and let it dribble down the sides. A little more milk may be needed to make it the consistency to pour but too much will make it too thin to stay on the cake. FUNNEL CAKES 2 beaten eggs VM cups milk 2 cups sifted flour 1 tsp. baking powder Ms tsp. salt 2 cups cooking oil In a mixing bowl, combine eggs and milk. Sift together flour, baking powder and salt. Add to the egg mixture; beat smooth with a rotary beater. Test the mixture to see if it flows easily through a funnel: if it is too thick add milk, if it is too thin add flour. Pour cooking oil into an 8-inch skillet and heat to 360' or until a cube of bread browns quickly! Covering the bottom bot-tom opening of a funnel with your finger, pour a generous Ms cup of batter into the funnel. Hold the end of the funnel close to the surface of the hot oil. Remove finger and release batter into hot oil in a spiral shape. Fry until golden, about 3 minutes. Using a spatula, turn the cake carefully and cook lor an additional minute. Dram on paper towels and sprinkle with confectioners' con-fectioners' sugar or serve hot with syrup. Makes approximately 20 cakes. CANADIAN BACON WITH ORANGE SAUCE 1 1U nHnCnM VintV nilt 111 1 c1l0C 6 thin onion slices 6 orange slices, rind removed j 2 tsp. sugar 1 Tbsp. cornstarch 1 cup orange juice 1 1 medium orange, peeled and cut in small pieces 2 tsp. grated orange rind I Arrange 6 slices of the bacon in greased, shallow, 7xll-inch baking dish. ! Top each bacon slice with an onion and orange slice. Add another slice of I bacon. Bake, covered, in oven preheated to 300' for about 30 minutes. Com- bine sugar and cornstarch in a small pan and add orange juice. Mix until j smooth. Bring to boil, reduce heat, and cook over moderate heat, stirring, , until thickened. Add orange section and orange rind. He visited Mr. and Mrs. Jim Goodrich in Bountiful, Mr. and Mrs. Russell Goodrich in Rex-burg, Rex-burg, Idaho and Owen Goodrich in Rigby, Idaho. Mr. and Mrs. Davis Morrill attended attend-ed the funeral service in Spanish Fork for Mrs. Morrill's cousin, Warren Robb. The Morrills also recently visited in North Ogden and Brigham City with Mrs. Morrill's daughters and in Morgan with Marinus and Nora Christensen. Sandy McKee hosted a luncheon and birthday party for Sherrie Brinkerhoff, Thursday. A number of friends and relatives were in attendance. Jerry and Randy Goodrich drove to Denver, Monday on business. Thelma Taylor hosted a birthday party for her husband, Peston Taylor, Monday night. The varsity Scouts enjoyed an overnight over-night encampment Friday night out towards the Book Cliffs. Bishop Jerry Goodrich and Scout leader Douglas Page went with them. Mr. and Mrs. Dennis Goodrich and Tammy were in Salt Lake City Monday. Mr. and Mrs. Merris McKee and Douglas McKee spent Wednesday and Thursday in Provo. A missionary testimonial will be held for Elder Sterling Goodrich Jan. 27 at 10 a.m. z,ma Ltu-.j Sue Peter's mother ill 87, of of Sue Mrs. Laura Quinlivan, Cheyenne, Wyo., mother Peters, suffered a heart attack last week. Mrs. Quinlivan was in intensive care for three days, and is now in a private room, and is responding to medication. We wish her a speedy recovery. The last band concert of the season was performed at West Junior High, with Whiterocks residents Marcy Ar-rowchis Ar-rowchis on the saxophone playing a duet with Robert Wyasket on the flute. Vincent Squires played his trombone and Adelbart Pargeets played his clarinet. . Evidently the Whiterocks community communi-ty has gone into hibernation for the winter, as this is all the news for this week. Hope to have more when the temperature gets up to zero. Lutheran membership seminar Pastor Bob Tasler of Our Saviour Lutheran Church, Vernal, and Faith Lutheran Church, Roosevelt, will offer a one-day seminar on Christian teachings at Our Saviour Lutheran, 370 South 500 West, from 8:30 a.m. to 4 p.m. Saturday, Jan. 26. This seminar is open to all adults 15 and over who wish to learn the teachings of the Lutheran Church in preparation for membership or to review Lutheran doctrine. Materials and lunch will be included.
