Show 1 6 Yemal Express Wednesdoy, December 28, 1983 By Angie Martin New Year's Day is a nice time to relax with friends and watch the football foot-ball games and the parades on television. televi-sion. Just unwind after the busy holidays. Here are a few of my favorite dip and snack recipes that you might enjoy having on hand and most can be prepared ahead and frozen. Also, a few drinks you might like to welcome in or have for New Year's Day. Happy New Year to everyone. ram)' BACON-CHEESE HORS D OEUVRES 2 cups sharp Cheddar cheese, grated 1 small can of ripe olives, chopped 2 Tbsp. Bermuda onion, chopped 1 cup mayonnaise 18 tsp. garlic salt Bacon bits (don't use Baco-Bits) 1 loaf of party rye rounds Combine cheese, olives, onion, mayonnaise and garlic salt and mix well. Spread the mixture on each slice of rye bread. Sprinkle bacon bits On top of each slice. Place rounds on a cookie sheet and bake at 300 for 15-20 minutes. Serve on heated tray or right from the oven. These can be made ahead and refrigerated or frozen, uncooked. Another great hors d'oeuvres to serve with this: Wrap large stuffed olive with bacon; secure with picks and fry in deep fat. LOG O' CHEESE 1 jar (2Mj oz.) dried beef 2 Tbsp. butter 1 pkg. (8 oz.) cream cheese (room temperature) 2 tsp. horseradish 1 2 cup pecans, chopped Cut dried beef into small pieces. Melt the butter in a small frying pay, then add the pieces of beef and saute about 3 mintues. Remove and let drain on paper toweling. In a medium size mixing bowl, combine cream cheese and horseradish and whip together. When the mixture is well blended, add the pieces of beef, stirring well. Form the mixture into a ball or log then roll in the chopped pecans. Wrap in a plastic wrap and chill, freeze for later use. SALMON LOG 16 oz. salmon, drained, skinned, deboned 1 pkg. (8 oz.) cream cheese, softened U tsp. salt 1 tsp. horseradish 2 tsp. onion, grated i Tbsp. lemon juice U tsp. liquid smoke (optional) 1 cup chopped pecans Combine all ingredients except pecans. Form into 2 logs and chill slightly. Roll the log in chopped pecans (chipped beef can be substituted for the pecans, if desired. ) PARTY SAUSAGE 3 lbs. sausage links 2 cans cream of chicken soup " 1 cup milk 'a cup catsup :ii tsp. dry mustard :i i tsp. Worchestershire sauce 18 tsp. fennel seeds (optional) .. , 18 tsp. cayenne pepper - i lb. Cheddar cheese (medium) shredded Slice the sausage into bite-size pieces. Place all the sausage into a skillet or frying pan and brown over medium heat. Remove the sausage to drain on paper toweling and place a toothpick into each piece. Discard any grease left in the pan. Combine the soup, milk, catsup, mustard, Worchestershire sauce, fennel and pepper in the pan over a low heat, stirring until well blended. blend-ed. When the mixture is heated through, stir in the cheese until all has melted and the mixture is smooth. Place the sausage into a chafing dish and pour the sauce mixture over all. Keep warm. Makes lots! HOT CHEESE DIP 2 lbs. Velveeta cheese, cut into cubes 1 pkg. taco seasoning mix 2 cans (7 oz.) green chili salsa I can (4 oz.) chiles (I use Oretega brand) Splash of dry sherry, optional Place all of the ingredients in a crock-pot and turn the heat on to high, l-ct the mixture melt at this setting for 30 minutes. Reduce the heat to low and continue to cook, stirring frequently, for about 2 hours. Dip will reduce and thicken a bit. This mixture can be placed in a chaffing dish or served right from the crock-pot with chips, crackers, etc. For added zest, pour in a can of drained, chopped pimiento. TANGY MEXICAN DIP I pkg. (8-oz.) cream cheese ': cup sour cream or IMO 1 green pepper, chopped I can (15-oz.) red kidney twans. chopped Tbsp, chili powder Dash or two Tabasco sauce (to lastei Garlic and onion salt to taste-I use about ' tsp. each Combine sour cream and cream cheese. Add other ingredients and mix well. Refrigerate nl least 4 hours or overnight. Serve with taco flavored and nacho flavored chips. Makes a large dip. Happy (lew Year. Main 789-7220 CRL STY CHEESE RINGS 2 cups all-purpose flour 1 cup butter or margarine 4 cup whipping cream 2 tsp. white vinegar l 2 cup grated Swiss, Monterey Jack or Parmesan cheese All-purpose flour 1 egg white, slightly beaten Additional grated cheese for topping Combine flour and butter in mixing bowl. Cut butter into flour until slightly slight-ly smaller than peas. Mix in cream and vinegar with a fork. Stir in cheese, distributing evenly. Form dough into a ball. Roll dough out on lightly floured surface to '4-inch thickness. Cut into rings using a doughnut cutter. Repeat with leftover dough. Place rings and centers ("holes") on ungreased baking bak-ing sheet about 1-inch apart. Chill for 30 minutes. Brush tops with egg white. Sprinkle with additional cheese. Bake at 450' for about 10 minutes or until lightly browned. Serve hot. Makes approximately 30 rings and "holes." I-I PIZZA DIPS For 4 dozen snacks you will need: lb. bulk breakfast sausage 2 cups all-purpose flour 4 cup grated Parmesan cheese 2 tsp. mixed Italian dried herbs 1 tsp. salt cup vegetable shortening to V2 cup ice water Hot Pizza Dipping Sauce (recipe follows) Sliced tomatoes and celery sticks Hot Pizza Dipping Sauce: In a saucepan combine 1 cup tomato sauce with 2 Tbsp. Paremsan cheese, 1 Tbsp. salad oil, Va tsp. dried oregano, xk tsp. garlic salt and V tsp. salt. Heat to simmering. Keep warm while serving. Brown meat in frying pan. Drain excess fat. Combine flour, cheese, herbs and salt in mixing bowl. Cut in shortening until mixture resembles coarse crumbs. Add sausage. Mix evenly. Sprinkle with ice water and stir until dough in just moist enough to handle. Shape into 1-inch balls. Place on ungreased cookie sheet. (This much can be done ahead if desired.) Bake at 450 for 10 to 12 minutes or until lightly browned. Serve hot with hot dipping dip-ping sauce. Accompany with sliced tomatoes and celery sticks. Garnish with sprigs of parsley, if desired. You can prepare Pizza Dips, cover, refrigerate and bake later. Or you can bake and freeze them, reheating before serving. I- I I I I APPLE CIDER NOG 2 eggs V4 cup sugar 1 cup apple cider 4 tsp. salt "4 tsp. cinnamon 18 tsp. ground nutmeg 2 cups milk, boiling hot or chilled Whipped cream and extra nutmeg for garnish In bowl, beat eggs and sugar until light and fluffly. Add apple cider, salt, cinnamon and nutmeg. If serving hot, whisk egg mixture into hot milk. Heat, stirring constantly, until mixture simmers (do not boil). Pour immediately im-mediately into heated mugs. Top with whipped cream and dash of nutmeg. If serving cold, whisk egg mixture into chilled milk. Serve in chilled glasses, garnished with whipped cream and nutmeg. If you like, you can stir in applejack or rum for adult gatherings. , To make ahead, if serving chilled, pour into pitcher, cover and refrigerate. If serving hot, prepare egg mixture, cover and refrigerate. When ready to serve, pour milk into saucepan, heat to simmering, then whisk in egg mixture. 4 servings. HOT CRANBERRY JERRY 1 quart cranberry juice 1 cinnamon stick (3-in. long) 5 whole cloves 2 Tbsp. brown sugar, packed, optional ;- 2 eggs '4 cup sugar 4 tsp. salt 4 tsp. cinnamon 18 tsp. nutmeg 2 Tbsp. dark rum or "2 tsp. rum flavoring 1 cup whipping cream, whipped 1 to 2 Tbsp. dark rum to serve in each cup, optional In a 2-quart saucepan, heat juice with cinnamon stick, cloves and brown sugar to simmering. Simmer 5 minutes. Meanwhile, beat eggs until fluffy. fluf-fy. Gradually add sugar. Beat until very light and lemon colored. Stir in salt, cinnamon, nutmeg and rum. Fold egg mixture into whipped cream. To serve, put about I4 cup egg mixture into bottom of a heated mug. Add hot cranberry juice. Top with another dollop of the whipped mixture. Add more rum, if desired, to each mug. Serve immediately. 4 servings. Freeze any leftover whipped egg and cream mixture. When you wish to use it later, scoop frozen mixture as you would ice cream. I- I I Hot Grape Punch: I ! quart grape juice I 2 Tbsp. sugar I 5 to 6 Tbsp. lemon juice I 1 4 tsp. ground cloves 3 HOT DRINKS 1 apple, unpeeled, diced 4 lemon slices, for garnish t Heat the grape juice in a saucepan. Add the sugar and simmer until dissolved. Stir in the lemon juice and cloves. Simmer 2 minutes longer. Add the apple. They also stopped on their way to visit the Jim Goodrich family in Bountiful and Mr. and Mrs. Russell Goodrich in Rexburg, Idaho. A number of parents enjoyed the Christmas program put on by the fourth and fifth grades at Lapoint Wednesday night. The different grades put on Christmas programs during the week. On Dec. 22, the Tridell Ward enjoyed a delightful Christmas party. A Christmas program was put on by ward members and then Santa Claus visited each family separately and each child had the opportunity of telling tell-ing Santa his wishes for Christmas. Mr. and Mrs. Forrest Goodrich left Thursday for Blackfoot, Idaho to spend Christmas with the Reid Goodrich family. They stopped and visited with the Larry Goodrich family fami-ly in Roy, Utah. Vida McKee made a trip to Salt Lake City Wednesday where she purchased pur-chased a new car. Mr. and Mrs. Ward Goodrich are rejoicing re-joicing over the arrival of a new son,, Edwin William, born Dec. 17 at the Ashley Valley Medical Center. He weighed 7 lbs. 7 oz. This is number eleven for the Goodriches. Mr. and Mrs. Lon Brinkerhoff and children went to Salt Lake City, Monday Mon-day where they visited Mr. and Mrs. Michael Hall. Leslie Goodrich and son, Spencer, accompanied the Brinkerhoffs to Salt Lake City. While there, Mrs. Goodrich had Spencer's one eye operated on. Mr. and Mrs. Howard Merrell, Reno, Nev., spent Christmas day and part of the holidays with Velora Merrell. Clair Haslem, a student from BYU, is home enjoying the holidays with the Ray Haslem family. Jerri and Glade Merkley, Borger, Texas, have been visiting at the Clyde and Errol Merkley home. Rondal McKee was sustained Sunday Sun-day as Stake High Councilman. Clyde Merkley left Saturday for Mantua to spend Christmas with his wife and Deon Richards and her family. fami-ly. Mrs. Merkley, who recently had 3 (6 oz.) packages semi-sweet chocolate chips 1 ( 14 oz.) can Eagle Brand Sweetened Condensed Milk 1 Tbsp. rum flavoring Finely chopped nuts, coconut, chocolate sprinkles, colored sprinkles or instant coffee In heavy saucepan, over low heat, melt chips with sweetened condensed milk, stir occasionally. Remove from heat; stir in flavoring. Chill 2 hours or until firm. Shape into 34-inch balls and roll in any of the above coatings. Chill 1 hour or until firm. Store covered at room temperature.
