Here's an easy recipe for a Marinade guaranteed to make the roast tender and juicy a tasty treat for the family table. MARINATED VENISON Chop: 1 onion, 1 carrot, 1 stalk celery. In a little oil saute the chopped vegetables, vege-tables, some parsley, 1 bay leaf and a few whole cloves 2 minutes. Then add 1 C vinegar and simmer sim-mer all 20 minutes. Strain and cool. Pour over venison roast, let marinate In frig 12 to 24 hours. Drain, cover roast with bacon strips. Bake 30 minutes per pound at 350, basting often. Another favorite recipe is for Jerky. My family (including (in-cluding me) loves It! JERKY 2 lbs. meat cut in thin strips 14 C soy sauce 1 T Worcestershire sauce 14 t onion powder 14 t pepper 14 t garlic powder 1 t Hickory Smoke flavoring flavor-ing salt Mix. Coat meat strips. Let stand In frig overnight. Drain, put meat strips on oven rack. Dry at 150 4 to 7 hours, till dry and brown. Cool. Store in plastic bag. Good Luck! This rain and snow in the higher elevations Is a sure sign, though somewhat belated, be-lated, that Fall has come to our Southern Utah neck of the woods at last. The cool crlspness of the Autumn mornings, and downright down-right chill of the evening will be a beautiful time to be in the hills. Hunters are already heading head-ing for the hills. Old favorite favor-ite hunting camps are being sought out, and filling with Campers and Trailers. I'm sure the modern mode of camping has it thumbs down over the older method. I, for one, love camping, but I DO enjoy getting up In the morning without that miserable back stiffness I used to get when I slept on the ground. If there was just one pebble or tiny pine needle ne-edle under my sleeping bag it grew into a boulder or tree before morning light. I miss not getting out into the hills and the commradry ; of hunting companions. I remember that waking up ; to several feet of snow was not unusual opening morn-; morn-; ing, and how we met it with anticipation, as it made the : tracking easier for the elu-: elu-: slve deer. Now, in my 'Old Age' the thought of knee deep snow makes me shiver, but I know I'd still enjoy it, once I was there in the heart of the mountains and 'caught the fever. The good fellowship, good food, and enjoyment of Nature's beauty would be enough for me even with--. out the thrill of bagging that sought after deer.
