Show New Dairy Director Urges Cottage Cheese For Salads, Snacks If people in the Beaver County area and Utah generally gener-ally were eating mounds of cottage cheese before World War II, they are eating mountains moun-tains of the protein-rich dairy food now and healthy gains are continuing into 1962. "In fact, Utah's cottage cheese production during January Jan-uary this year was approximately approxi-mately 7 ahead of that in January, 1961, said John Van Drimmelen. Mr, Van Drim-melen Drim-melen is manager of the American Dairy Association of Utah, People in this area are invited in-vited to join in a state-wide observance of a cottage cheese festival continuing until Easter, Eas-ter, April 22. The festival is sponsored by the ADA of Utah. "Cottage cheese contains most of the protein, calcium, phosphorous, iron and vitamins found in three quarts of milk," said Dixie Lee, well known home economist. "It is rich in food value, yet low in calories, and cost. Busy homemakera find cottage cheese can be served so many delicious ways, so easily no cooking, or peeling peel-ing or cutting," |
