Show USE YOUR BEAN! Chocolate is America's favorite flavor. But until about 500 years ago, chocolate choco-late was a luxury reserved for Aztec emperors. When Spanish conquista-. conquista-. dores brought chocolate to Europe as a prize, only royalty could indulge. Machine-grinding in the a late 18th century led to mass production. In recipes calling for baking chocolate, you can use instead three tablespoons unsweetened unsweet-ened cocoa plus one, tablespoon shortening for each one-ounce square of unsweetened baking chocolate. When you have the leisure and want to make breakfast a special occasion, occa-sion, try Eggs a la Suisse : For each egg, use one ounce of Swiss cheese. Shred half the cheese and slice the other half. Place the slice into the bottom of an individual ramekin or custard cup. Break an egg atop the cheese, season with salt and pepper, pep-per, then spoon one tablespoon half and half over each egg. Top with remaining shredded cheese. Bake in a moderate (350) oven 12 to 15 minutes. Make you hungry? |
