Show OATMEAL. - Give the children oatmeal at least once a day. It is genuine bone and muscle food, and they must thrive. Could our girls make the morning and night meals on real nourishment - not pastry - take more to [unreadable line], we should have less neuralgia among our women. Indeed, this oatmeal mush would afford ample food for the last meal, which should ordinarily be the lightest, simple and easy of digestion, securing good sleep, while it may well form a part of the morning meal. Its extensive use would do much to promote health among us. - Waverly. ORANGE PUDDING. - Take three or four oranges, peel and slice very thin, put into a pudding dish, sprinkle over them enough sugar to sweeten nicely, and let stand a while. Make a boiled custard of one pint of milk, two tablespoons of flour and the yolks of three eggs, and when cool pour it on the orange. Be sure not to pour it on while hot, as it will cook the orange and spoil the taste. Thoroughly beat the whites of the eggs with powdered sugar, pour over the top and brown in the oven. FRUIT CAKE - One pound butter, one pound brown sugar, two pounds raisins, two pounds currants, ten eggs; beat yolks and whites separately; one pound flour, one tablespoon each of cinnamon, cloves, mace and nutmeg, one large tablespoon syrup, one heaping teaspoon baking powder, one-half pound citron, one coffee cup milk; dredge fruit well with flour and bake in a moderate oven about three hours. TOMATO SAUCE - Pare, slice and stew the tomatoes for twenty minutes. Strain and rub through a colander, leaving the hard tough parts behind. Put into a saucepan with a little minced onion, parsley, pepper, salt and sugar. Bring to a boil; stir in a good spoonful of butter rolled in flour. Boil up and serve. STEWED MUSHROOMS - Slice the mushrooms into halves. Stew ten minutes in a little butter seasoned with pepper and salt and a very little water. Drain; put the mushrooms in a pie dish; break enough eggs to cover them over the top; pepper, salt and scatter bits of butter over them; stew with bread crumbs and bake until the eggs are set. Serve in a dish. |
