Show Trout for dinner Although trout is most often of-ten cooked in only one way pan fried it is suitable for the most subtle and sophisticated sophisti-cated types of fish cookery. There's no denying that trout is at its prime cooked over the campfire, but it's also al-so delicious poached in a liquid liq-uid that only subtly seasons the fish. The poached fish is also used as the base for Trout Pie, chilled and served with a dill sauce, or flaked and used in a seafood salad or a molded salad. Lemon, butter, and ' cream embellish freshly sau-teed sau-teed trout and mushroom caps. Brazilian baked trout is cooked with garlic, white wine, parsley, green onion, bread crumbs and butter. |
