Show I Page 4C South Edition Lakeside Review Wednesday , March 2, 0 1 983 Busy Homemakers Get Hints for Appealing Meals Balancing a busy lifestyle and quick but nutritious meals can be quite a challenge for todays homemaker but it can be done, according to Connie Allen. Mrs. Allen presented her ideas for quick meals for busy ' days to a large group of Layton women last month and offered some of her favorite ideas and recipes for keeping appealing meals on the table on hectic days. Always prepare meals in an she said. orderly kitchen, , Clean up all evidence of previous meals or snacks before you begin. It helps you to work more quickly and efficiently, and youll feel better in a clean kitchen. Plan menus in advance and have all of the ingredients for a quick meal in the house. This, she said, will eliminate time consuming trips to the store for an item or two. Mrs. Allen also advised homemakers to have a phone . with a long cord or even a cordless phone in the kitchen so that the meal can be prepared while taking calls if necessary. She is a fan of double batch baking, allowing her to make two meals on a less busy day and freezing one for a convenient meal later. Mrs. Allen also said that being a time and task juggler really helps a busy cook. Doing several tasks at once, such as cooking meat while setting the table saves many valuable minutes. To avoid family complaints when it is apparent that dinner might be delayed, she suggested having the table set and an apron on when the family gets home. Even if dinner is late they can see that there is hope of a meal, she said. Tips for quick cooking or cleanup can speed things also. Mrs. Allen said that if holes are poked in the center of hamburgers before cooking they will cook faster. When they are done the holes will be gone. Potatoes will bake faster if a hole is made with a nail in the center before baking. It can shorten baking time by 15 minutes, she said. Splattering can be eliminated from frying foods by sprinkling a little salt in the frying pan or by placing a metal colander upside down over the skillet. The holes in the colander allow the steam to escape but keeps the grease splatters in the pan and colander for quick clean up. Messy boilovers can be prevented by adding 2 teaspoons of oil to the cooking water, she said. Casseroles and crockpot dishes are among Mrs. Allens favorites for busy days as are quick salads and desserts. Following are a few of her busy day meal recipes: Drain noodles and stir in with other ingredients. Pour into a baking dish and bake at 350 degrees for 30 miEasy Stroganoff pound ground beef 1 4 oz. drained Vz Cook and drain macoroni. Place ingredients in alternate layers in a buttered casserole dish. Place lid over dish. Bake at 350 for 45 minutes. Makes servings. 6-- can sliced mushrooms, pound ground beef Vi can chicken gumbo soup 2 tbs. catsup 1 tbs. mustard 1 medium onion chopped tsp. salt cups water 1 beef boullion cube 114 cups minute rice Vz cup sour cream Brown beef quickly with mushrooms, onions, and salt. Stir in water and boullion cube. Bring to a boil and stir in rice. Cover and simmer for 5 minutes. Remove from heat and stir in sour cream. Garnish with chopped parsley if desired. Makes about 6 cups. N can tuna, drained can cream of mushroom soup 1 can peas (or corn) 6 oz. noodles 1 cup milk Vi cup butter 1 cup grated cheese salt and pepper to taste Boil noodles and drain.
