Show Apples have special place in good nutrition diets By LUCILLE STRINGHAM : Apples have a special place in "nutrition. Apples are relatively high in potassium and low in sodium content. Apples are rich in natural pectin which helps the body lower the serum cholesterol levels. The sugar in apples is primarily fructose sugar. Apples are a good source of dietary fiber and also helps quench thirst. Apples eaten raw sweeps over the teeth and soft tissue cleaning them. There is no flavor like that of a ripe apple. . FROZEN APPLE SALAD 1 cup crushed pineapple 2 eggs beaten Vi cup sugar Dash salt 3 Tbsp. lemon juice 2 cups chopped unpeeled apples Vi cup chopped celery 1 cup whipping cream, whipped Drain pineapple and save the juice. Add enough water to the pineapple juice to make Vi cup liquid. li-quid. Stir into beaten eggs; add salt, lemon juice, and sugar. Cook, stirring until mixture thickens. Cook about 5 minutes. Cool. Fold drained pineapple, apples, celery into the cooled cooked mixture. Whip the cream and fold into the other ingredients. Spoon into an 8x8 inch pan or dish and freeze. Serves 9. Cut in squares. Before serving let stand in refrigerator 30 minutes to thaw. QUICK APPLESAUCE OATMEAL BREAD 1 cup shortening 1 Vi cups brown sugar 4 eggs 2Vi cups flour 1 tsp. baking powder Vi tsp. soda . . Vi tsp. salt 2 tsp. cinnamon V4 tsp. cloves Y tsp. nutmeg 2 cups applesauce Vi cups quick cooking oats 1 cup raisins 1 cup nuts Beat shortening and sugar together until creamy, add eggs, one at a time, beating well after each. Mix the oatmeal and applesauce together. Sift the flour, spices and salt, baking powder and soda together. Add the dry ingredients and applesauce oatmeal mixture alternately to the creamed mixture, stir until blended. Coat raisins and nuts with about 1 Tbsp. flour and add to the bread mixture. Pour into 2 greased loaf tins 5"x9". Bake at 350 degrees for one hour or until done. Add maraschino maras-chino cherries for a festive touch. APPLE CAKE PIE S large apples, peeled, cored, thinly sliced 1 tsp. lemon juice Y cup sugar, divided Vi cup butter or margarine 1 egg, beaten Vi cup sifted flour Vi tsp. baking powder Speck salt Place sliced apples in a well greased 10 inch pie tin. Sprinkle with the lemon juice, cover with V cup sugar. Cream together the remaining re-maining Vi cup sugar with the butter but-ter or margarine; add egg and mix together. Stir together the flour, baking powder and salt and mix with the creamed mixture. Spread over the apples. Bake at 350 degrees for 45 minutes. mi-nutes. Serve hot or cold with whipped whip-ped cream or ide cream. OCTOBER CAKE 3 cups sifted all purpose flour 3 tsp. baking powder V tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg V tsp. cloves V cup shortening 1 Vi cups brown sugar 3 eggs beaten 1 Tbsp. lemon juice 1 cup apple cider Sift together dry ingredients. Cream shortening and sugar, add eggs and beat well. Add lemon juice to cider. Add cider alternately with the dry ingredients to the creamed mixture. Beat well. Pour batter into 3 greased and floured 8 inch round pans. Bake at 375 degrees de-grees for 30 minutes. Cool for ten minutes and then turn out on rack to cool. Frost. CREAMY CIDER ICING Vi cup butter or margarine 3Vi Tbsp. flour ;:; Dash salt?" trT.;., Vi cup ;ider " 3 cups powdered sugar Vi cup nuts finely chopped Heat margarine or butter in saucepan. When melted add flour and salt, stir well and add cider. Stirring, cook for one minute. Remove Re-move from heat and add the powdered pow-dered sugar and beat well. Add nuts. |
