It's colorful and has the richness and flavor that come from combining cheese, hard-cooked eggs and bread cubes with tomatoes for zest. Perfect with this oven dish are Brown 'n Serve rolls. A tangy salad fresh fruits if possible and well-filled coffee or tea cups will complete this simple club luncheon menu. Easy Fare Casserole cup shortening 1 quart milk cup flour 2 cups process cheese, grated SV2 teaspoons salt 2 dozen eggs, hard-cooked 8 teaspoons celery salt 4 (No. 2U) cans tomatoes, 1 quart juice from canned drained tomatoes 1 gallon bread cubes, fresh Melt shortening in a saucepan. Blend in flour, salt and celery salt. Add tomato juice and milk and cook slowly until thick, stirring constantly. con-stantly. Add grated cheese, stir until it melts. Peel eggs and cut in halves. Arrange halves on the bottom of a greased 12" x 20" x2'i" baking bak-ing pan. Cover ej-gs with two-thirds of the bread cubes, topping with the drained tomatoes. Pour cheese sauce over tomatoes. Cover with re-1 re-1 maining bread cubes and bake in a moderate oven (350F.) for 20 minutes. |
