Show ARE WE STARVING? A Utahn, D. Clegg, who has devoted several years to research re-search on foods and especially celery, points out that it is quite possible that we are starving. While we get plenty of food, Clegg points out, we are probably prob-ably eating fruits, vegetables and grains which no longer contain-enough contain-enough certain vital minerals so important to health. "Healthv plants mean healthy people," says Clegg. "You can t raise a strong race on a mineral1 depleted soil." In support of his claims Clegg has had soil samples from various fields an- . alvzed and can readily show the-soils the-soils in many instances are below be-low standard in calcium, iron and 14 other important minerals. He maintains that if farmers would put back in the soil the 16 minerals now being depleted, vegetables would be insect resistant, re-sistant, and because of their high mineral content would demand de-mand premium prices from consumers. |
