It's "Crunchy Salmon Loaf," made with crushed round buttery crackers, canned . salmon and tasty seasonings. A single one-pound can of salmon is .enough for four generous family-style servings. The crushed crackers add both good texture and nourishing quantity to thi3 new main dish. Make it this easy way: Crunchy Salmon Loaf 1 1-lb. can salmon, und rained 2 eggs, beaten 2 cups finely crushed Hi Ho cup milk Cracker crumbs y2 teaspoon salt 1 cup minced celery 4 teaspoon pepper 2 tablespoons minced onion 1 teaspoon prepared mustard Heat oven to 375 F. (moderately hot oven). Combine all ingredients in-gredients in a large bowl, mixing well. Turn mixture into a 4 greased 1-quart fish mold (or a 9-inch by 5-inch loaf pan) . Bake at 375 F. for 40 minutes. Unmold on to heated serving platter, and sprinkle with additional crumbs. If fish mold is used, arrange two halved crackers to form "tail," and two slices of stuffed olive for "eyes." Garnish with parsley sprigs. Serve with chili sauce, if desired. |
