Show Research Points To Richer Vitamin Soures Comprehensive research studies stud-ies have just disclosed that but-terfat but-terfat is a much more important source of vitamin A than formerly form-erly believed. Based on assays in experiment stations throughout the United States, the Department Depart-ment of Agriculture states that the vitamin A value of butter varies from 11,000 units of vitamin A per pound in the winter, to 18,000 units in the summer, with an average of over 15,000 units for all butter made. This is more than 50 more vitamin A from butterfat than has often been credited to it, according ac-cording to the National Dairy Council. The same survey shows that the average quart of milk contains con-tains 1,530 units of vitamin A. It also shows that the average person per-son gets about 2,340 of the estimated es-timated daily requirement of 5, 000 vitamin A units from the a-mount a-mount of milk and its products now consumed. Vitamin A is "essential for life and health in people of all ages", according to the U. S. Department of Agriculture. Agricul-ture. Of even greater importance are findings showing that by better daily cattle feeding methods, meth-ods, the vitamin A content of milk can be increased far beyond the present average. Cows transform trans-form the carotene in feed into vitamin A. By carefully preserving preserv-ing hay and silage it is possible to produce milk fat with a vitamin A content nearly double the present average. |
