Show MILK VS. MEAT. The United States Food Administration is encouraging In every way the use of milk. Since It Is one of the best meat substitutes, and since meat is upon the list of foods to be conserved, let us modify our eating habits accordingly. Try theso milk concoctions occasionally: Cream of AKparngn Soap, To one cupful white sauce and ono cupful cup-ful milk add one cupful asparagus puree. One cupful of tho water In which tho as paragus was cooked may be used for part of the liquid. Tbln Wbite Sauce. One tablespoonful fat. ono tablcspoonful barley or corn flour, ono cupful milk, one-half one-half teaspoonful salt, one-eighth tcaspoonful tcaspoon-ful pepper. Melt fat In saucepan, stir in the flour, salt and pepper and cook slowly In saucepan without browning until tho mixture bubbles Remove from the high heat, add the milk gradually, beating and stirring constantly until the sauce thick-I thick-I ens. |
