Set empty jars and rubbers in pan of water to heat and keep hot Fill wash boiler to cover jars two inches with water. Heat water in wash boiler. Put windfall apples through ci- dev press. Pour liquid into glass jars or - 4- pitchers. - 4- Let stand eight hours, or until 4- perfectly clear. H Pour the clear liquid Into pre- serving kettle. H 4- Do not allow sediment at hot- H 4- lom to enter. H Add one level teaspoonful of 4 4- lime carbonate and stir thorough- H 4- ly. H 4- Boil down rapidly to a clear - liquid (one-seventh of the origin- H 4- al volume). H 4- Test: Pour a little into cold H water; should have the consis- H 4- tency of maple syrup; should not H hardon. H 'Pour Into fruit jars or pitchers. - Place containers in buckets or H wash boile'r of hot water, and al- H 4- low to cool slowly. H H 4- Pour the syrup In hot jars. H 4- Place rubbers and tops in posi- H tion, not airtight. H Place jars on false, bottom in A 4- wash boiler. H 4- Keep tops of jars submerged H 4- two Inches. H 4- Put coyer on wash boiler, and H 4 lot water boil fifteen minutes. H 4- Begin to count when water A 4 starts to boll. H 4 A 4 Remove jars and make covers H 4- airtight.
