Show ocookoc I HOW TO PREPARE CANDIED SWEET POTATOES O0-CKKKOOaCO-CHXHO-0KH0K (Prepared by tlie l:nltt-d States Depui tment of Atrrlculture. 1 Candied sweet potatoes are a general gen-eral favorite, but not everyone knows the trick of making them tender and using corn sirup as well as sugar to candy them. The parboiled sweet potatoes po-tatoes are baked-In the sirup mixture. Another good sweet potato dish which can also be served in a casserole cas-serole or baking dish Is a combination combina-tion of sweet potatoes and apples. Still another is made with pineapple to furnish tlie sweet-acid flavor that goes so well with sweet potatoes. All three recipes are supplies by the bureau bu-reau of home economics of the United States Departmeut of Agriculture. Candied Sweet Potatoes. 6 m e d 1 u m - sized tsp. .suit sweet potatoes 4 tbs. butter or t cup corn sirup other fat M, cup sugar Partially cook tlie sweet potatoes in boiling water, cool, and skin. Cut the potatoes in halves lengthwise, or in three pieces if the potatoes are large. Tut In a greased baking dish large enough for just one layer, not packing pack-ing too closely. Slake a sirup by boiling boil-ing the corn sirup, sugar, salt, and fat until fairly thick. Pour the sirup over the potatoes and bake In a very moderate oven for one hour or more. Turn the potatoes carefully as they are cooking. O-CKOO-0rKKOCKW Scalloped Sweet Potatoes and Pineapple. Pine-apple. S medium- sized 4 tsp. salt sweet potatoes 4 tbs. melted but- 1 can crushed pine- ter or other fat apple Select a dry mealy variety of sweet potatoes aud cook in the skins in water wa-ter to cover. When tender, scrape, cut in slices of uniform thickness, and place in a shallow greased baking dish. I'our the pineapple over the potatoes, sprinkle with salt, and add the fat. Hake in a moderate oven for 30 minutes, min-utes, or until light brown on the surface sur-face and the sirup of the pineapple has become thickened. Serve from the baking dish. Scalloped Sweet Potatoes With Apples. 3 medium- sized 'i cup sugar sweet potatoes Vz tsp. salt. 4 medium- sized 3 tbs. butter or apples, pared and other fat - cored Cook the sweet potatoes in boiling water until tender, cool, and skin. Cut the potatoes and apples Into slices, place in alternate layers in a greased baking dish, sprinkle each layer lay-er with sugar and salt, dot with fat, add a little water, and bake for 30 to 45 minutes, or until the apples are soft and the top layer Is brown. Serve in tlie baking dish. |
