Show Planked White Fish. Wash and dry a fresh fish weighing four pounds. Remove the head, then split the fish from head to tail so that It can be flattened out on a plank. Heat the plank and brush It with butter, but-ter, place on the fish, skin side down, and tack it firmly In place. Put It intc-a intc-a hot oven. Mix togpthnr half a cupful of butter, one cupful of boiling water, wa-ter, half a teaspoonful of pepper and one teaspoonful of salt. Baste the fish with this mixture every ten minutes min-utes for 35 minutes. Remove from the oven, place the plank on a dish and garnish with lemon and parsley. |
