RICE STUFFED GOUDA CHEESE 4 10-ounce gouda cheeses Hi cups chopped cooked chicken 2 tablespoons minced onion 2 tomatoes, peeled and chopped 2 tablespoons butter 2 eggs, beaten lji cups cooked rice 1 cup sliced mushrooms Vi teaspoon salt Dash of pepper Carefully cut a -lnch slice from top of each cheese. Scoop out each, leaving a scant Vi-inch shell. Remove red rind. Combine chicken, onion and tomato. Saute in butter until lightly browned. Combine eggs, rice, mushrooms, scooped out cheese cut in small cubes, the chicken mixture and seasonings. Place each cheese shell in a greased 2 cup casserole, deep enough to hold the stuffed cheese and heap mixture into the hollows. The mixture should extend well above the cheese. Replace top slices. Bake in a moderate oven (350F.) about 30 minutes. Makes 8 servings. |
